Lemon Bundt Cake

I'm not a lemon cake fan but i made this for my husband and he loved it. He said it was even more moist after being covered for one night. I used the white sugar and lemon juice glaze but he said it was a bit too lemony and would pefer a powdered sugar glaze w/o lemon juice. The cake was still a wonderful success.

Beth's Spicy Oatmeal Raisin Cookies

GREAT cookie! They do get brown really quickly so be careful. My oven tends to get hotter in the back so I have to turn the sheet 180 degrees about half way through the baking time to make sure they bake evenly, and only the edges get golden brown on these. Any longer and they will get crispy after they cool off.

Brunch Enchiladas

This was a huge hit. It made 6 large enchiladas and 4 men ate it all in one sitting (my husband shared it with his co-workers). After reading some of the other posts I knew I needed to add some kick to it so I included 1/3 cup of chopped jalapeno peppes to the ham mixture and added about 6-8 drops of hot sauce to the egg mixture. They all loved it and its the first time I've had men asking me for a recipe. Next time I will try sausage instead of ham.

No Bake Cookies III

I liked these although they were too sweet for the average person. They also crumbled when bitten into, so I thought they were a bit dry. I let them boil for the reccommended 2 minutes. I will probably make these again but cut back on the sugar by about 1/2 cup. Overall, pretty good and everyone else who tried them went back for seconds.

Award Winning Soft Chocolate Chip Cookies

I live at high altitude (8000 ft) so to to compensate, I added 1/4 cup more flour. Just make sure your measurements are level. This cookie turned out just perfect. They stayed chewy for about 3 days (tightly wrapped). I submitted a photo of my results in the recipe album.

Coconut Ambrosia Salad

AWESOME, worthy of more than 5 stars in my book. This is exactly the recipe I had been searching for. I also added a couple of tablespoons orange juice after everything is combined. It helps flavor the whipped cream and also makes the marshmallows softer. Just heavenly, you won't be disappointed!

Eggplant Mixed Grill

My husband made this dish with grilled tuna fillets and tiger prawn shrimp. He made asparagus, red & yellow bell peppers, baby portabella mushrooms, red onions, and eggplant. Instead of grilling, he sauted them in a huge wok....you'll need a really big pan if you use the original portion scale. Anyway we both loved how it turned out. Like one of the other reviewers, the eggplant did turn black while cooking. It wasn't very appealing to look at but it was probably the most flavorful eggplant i've ever had. We'll definitely use this one again.

Beth's Chess Pie

Caramel Apple Pie II

This turned out okay, I had to use carmel topping because I couldn't find carmels at my grocery store. After baking the pie filling was a little runny but not bad. Probably because of the carmel sauce. It was gone in 2 days so it must have been good, I just wasn't impressed with it myself.

Best Peach Cobbler Ever

Pretty much a disapointment. Too soggy and the crust never formed even after over baking it. I should have read the reviews on this one before trying it but I was in a hurry for a good peach cobbler. My mistake I guess. I think with a lot of alterations this recipe might turn out pretty good but I won't be trying it again.
