Frozen Vegetable Stir-Fry

Very good, just a little too much garlic for me (woke up in the middle of the night still tasting it). So next time I will only use 1 tsp of garlic powder. Otherwise, this was wonderful with an Asian veggie mix and some tofu fried in coconut oil. Yum!!

Beet and Yogurt Salad

I made this exactly as written and did not like it because it had too much yogurt and not enough spice. I would recommend less yogurt--maybe start with one cup and mix in more if you want more, and increase the mustard and cumin if you want to actually taste them. As a fan of cilantro I was disappointed by how it made this taste. I don't see myself making this again.

Cream Cheese Penguins

These were the talk of my sister-in-law's Christmas party. Believe it or not, these were not that time-consuming--I made approx 40 in less than an hour. Based on reviews, I used onion and chive cream cheese and piped it into the 'body' with a makeshift pastry bag using a ziploc with the corner snipped off. I also made one with a carrot-peel 'scarf' and put it on top of a store-bought port wine cheese ball 'igloo' which I covered with cream cheese. Putting scarves on all of the penguins would have added a significant amount of time to the overall project; I discovered by just doing one that it is a bit labor intensive. Mine were a flavorful hit without the scarves, so feel free to leave them off. My mother-in-law swept through the house carrying the platter of penguins, saying "look what my daughter-in-law made!" That alone made it worth it. I will be making these every Christmas!

Meatball Nirvana

Wonderful meatballs with a KICK! I reduced the amount of red pepper flakes to 1/4 tsp and they still had a nice spiciness to them. Didn't change anything else. I made them twice in two weeks, and all who tried them gave rave reviews. Hubby loved them so much he said he would pay to eat them in a restaurant. They also won out over his sister's meatballs, which have been his lifelong favorites. Shhhh....don't tell her!!

Strawberry Oatmeal Breakfast Smoothie

This was nothing to write home about. The oatmeal gave it a grainy texture. I guess one positive aspect would be that it is filling, but I'm going to stick with yogurt-based smoothies.

Creamy Avocado Cucumber Soup

Incredibly refreshing and delicious. I altered mine using the recommendations of reviewer bethnewell, and it came out so tasty. I would imagine that without the addition of the chicken bouillion and cilantro it might be a bit bland. My brother, who despises cilantro, had a taste and thought it was very good. This will be a summer staple for me!

Buffalo Chicken Soup

I enjoyed this soup so much I made it twice in one week. I made some changes based on other reviews--instead of water/bouillon I used 3 cups of chicken stock, increased the buffalo sauce to 1/3 cup, added 1 cup of cream of tomato soup (I bought prepared soup in a carton), a dash of garlic powder, and about 1/2 a can of corn. I also shredded the chicken instead of cubing, just a personal preference. There was no need for salt or pepper. It was delicious!! My hubby liked it despite the celery (one of his least favorite things). We garnished it with blue cheese and chopped cherry tomatoes, and served with warm ciabatta bread. A keeper!
