This tastes much better than it sounds. My picky husband even loved it. We ate it all!

Georgia Peach Homemade Ice Cream

Reviewed: Jul. 5, 2006
This tastes like summer! We used the old fashioned gallon ice cream machine. To trim the fat we used fat free condensed milk and evaporated milk. We used the full cup of sugar and added 3 cups of whole milk. Also we didn't puree the peaches, just left them in small chunks-- it makes the ice cream more fun to eat.

Steak and Rice

Nice, healthy meal. I used a cut of the Laura's beef + did not make the gravy. I used two kinds of peppers and served over brown rice. A great way to have a correct portion of red meat.

Hamburger Steak with Onions and Gravy

Just to echo what everyone else said, I impressed myself with this meal. Mostly because I didn't think I could make the gravy, but it was great. Served over rice and steamed vegetables.

Caramel Apple Pork Chops

Reviewed: Dec. 21, 2004
Really heart-warming. Didn't get five stars b/c I couldn't get the sauce to firm up. Still good though. Added the pecans + that was nice. Fixed w/ a side of baked sweet potatoes.

Cowboy Skillet Casserole

Reviewed: Nov. 19, 2004
This dish was the biggest hit at my table. I took the advice to add a drained can of diced tomatoes, and some frozen corn, and I did not use as much red pepper. Also, I practically doubled the corn bread because I had to fill the top of my skillet. I need to modify that part but otherwise this was definently something I will make again.

Peach Crisp III

Especially good. I used fresh peaches and added a little bit more flour and a little sugar to the peaches. My husband just raved. This is it for us. And I felt like it was fairly healthy too.

Great. I made this for a special occasion and used boneless, skinless chicken breasts and paired it with some roasted potatoes. It was a "special" hit.

Yum, Yum. Great muffins. I used margarine instead of butter and skim milk instead of whole and the taste was fantastic. Next time though I will melt the butter before using it and simply stir the first four ingredients together.

Fabulous Zucchini Grinders

Reviewed: Jul. 22, 2004
So good and so quick. I did saute the zucchini, but instead of red pepper I used a 1/2 teaspoon of minced garlic. I served it warm on ciabatta rolls with a salad. Quick, delicious, and healthy!

Tasty Orange Chops

Reviewed: Jun. 26, 2004
Very flavorful. Tastes like something you might get in a restaurant. I too made the marinade in mini-food processor (using 1/2 cup of orange juice) and used it on chicken. After 8 hours I put the chicken and 1/2 marinade in a skillet and just sauted it that way. The other half of the marinade, which I reserved, I boiled, and my husband used it for dip. After the chicken was cooked, I put shredded mozzerella on top. Tasty orange marinade got rave reviews at this house and dinner was so easy!

Peachy Pork Chops

Reviewed: Jun. 24, 2004
I know that most of the reviews for this recipe are positive, and I am sure it works for some, but I really did not like the taste of the pork and the peaches together. A word to those picky eaters, the pork/peaches combo tasted a bit greasy for me and the thought of it now makes my stomach turn. Hopefully those who would not be detered by that will investigate this recipe for themselves.

Applesauce Raisin Bread

Yes, this does turn out nice and moist. I omitted the oil and added more applesauce (which did make it more "appley"). One idea may be to add shredded apples for more texture and flavor.

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Very good and seemingly healthy. I think next time I will use 1/4 cup of margarine instead of oil to give a more creamy taste. Otherwise fabulous --would be great to make for guests or a office breakfast.

Uncooked Banana Pudding

Banana pudding has always been one of my favorite desserts. This recipe does not disappoint. I think I have found my lifetime recipe. I used all fat-free products (sour cream, Cool-Whip, and milk), and I also used the 11oz. box of low fat wafer. Still very good and not chemically at all.

Whole Wheat Banana Nut Bread

Good but not super. I used 1/2 applesauce and 1/2 oil, but I thought it was still a little dry. My husband thought it was wonderful. I will fiddle with the recipe and make again.
