Chocolate Mint Dessert Brownies

These were a great hit! After reading some other reviews, I made a regular brownie mix and used the topping from this recipe. I substituted 1 tsp. of peppermint extract for the creme de menthe and had no problem melting the chocolate chips down in the microwave. I'll definately be making these again. Thanks!

Shrimp-and-Rice Stuffed Tomatoes

I thought this was great! Be very careful when scooping out the tomatoes though. And I did have one burst because I overstuffed it. I'll be more careful next time. Thanks!

Grilled Onions

these were great! they tasted like those fancy appetizer onions at popular resturaunt chains. I made them in the oven on 350 for 90 minutes - perfect!

Italian Tacos

Caribbean Chicken over Coconut Rice

My husband and I loved this! My husband is from the Caribbean and was a little skeptical, but both the chicken and rice were delicious. And hubby requested that from now on, I always cook rice in coconut milk! Thanks!

Banana Coconut Loaf

This was excellent! I didn't have any coconut, so I substituted coconut milk. It made the bread sweet, but it tasted great. I'll definately make this again.

Cooking Light magazine's Mexican Chicken Casserole

My husband and I both loved this recipe! It definately lacked presentation, but more than makes up for it in taste. Next time, I may use 10 inch tortillas and only use 1 per layer.

Aunt Millie's Broccoli Casserole

I brought this to Thanksgiving dinner this year and it got huge hits. I used fat free cheddar instead of American cheese, and I used fat free mushroom soup and omitted the salt. Everyone loved it - thanks!

Fondue Bread

I was a little skeptical about this while I was making it because my dough didn't seem to pull together well. I think I used too much flour - next time, I'll only use 3 cups or so. Plus, the dough was too elastic to roll out to the correct measurements, so my loaf was a little small. But it baked up wonderfully and tasted AWESOME. It was gone in minutes at my New Years Eve party. I'll definately make again, just with less flour. Thanks!

Blackened Tuna

This was my first attempt at making any kind of fish and it turned out beautifully. I was a little stingy on the cajun seasoning because I wasn't sure how the fish would absorb it. But it tasted great and I'll add a little more next time. Thanks!

It's Chili by George!!

My husband and I loved this - a great compliment from him - a relocated Texan. I did make a few changes. I scaled it down to 5 servings since it was just the 2 of us. I omitted the tomato juice and added 2 cans of diced tomatoes. I kept the full amount of onion and beans, but omitted the green pepper since hubby doesn't like them. I added some red pepper flakes, and simmered it on the stove for about 3 1/2 hours. Tasted amazing - perfect for a snowy day. Thanks George!

Double-Cheese Meat Loaf

This is excellent! I followed the directions exactly except that I used fat free mozz. cheese. It didn't really hold together as a loaf, and pretty much came out as a mess when I dished it out, but the taste more than makes up for looks. I'll definately make this again!

Empanadas

These were a huge hit at my work luncheon - a couple people asked me for the recipe. I followed the directions exactly, and used apple jelly. Be sure not to fill them too much or the jelly spews out. Also, be sure to pinch the seams tightly. I'd also recommend lining your cookie trays with parchment paper. I'll definately make these again - thanks!

Egg and Cheese Puffs

I made these for a retirement brunch at work and everyone raved about them. They taste like a crustless mexican quiche. The cupcake liners were a great suggestion. The ones I made without the liners didn't make it out of the pan!

I made this for a dinner party and everyone loved it! I used minced garlic from the jar and put about 1/2 tsp on each chicken breast. I also increased the amount of butter for each one - I used a heaping teaspoon. All in all, a wonderful recipe. Thanks!

Chicken Satay

This was fabulous! I didn't change a thing, and let the chicken marinate for almost 24 hours. I couldn't find skewers in my grocery store, so I put the chicken in a baking dish and baked at 350 for about 30 minutes. Then I served with toothpicks, and peanut sauce from the Best Peanut Sauce recipe on this site. It got rave reviews at my New Years Eve party. I'll definately make this again - thanks!
