Chocolate Mint Dessert Brownies

Reviewed: Apr. 4, 2004
These were a great hit! After reading some other reviews, I made a regular brownie mix and used the topping from this recipe. I substituted 1 tsp. of peppermint extract for the creme de menthe and had no problem melting the chocolate chips down in the microwave. I'll definately be making these again. Thanks!

Broccoli Chicken

Reviewed: Aug. 3, 2004
Since I'm not big on frying anything, I combined all the ingredients in a baking dish and baked in the oven at 350 for about 45 minutes. Tasted great - everyone enjoyed it!

Simply Swordfish

Reviewed: Apr. 7, 2008
I thought this was great! I didn't really measure the spices or the lemon juice. I squeezed fresh lemon over both sides of a 1lb swordfish steak - about half a lemon. Then I sprinkled both sides of the fish with lemon pepper and dill weed until it was evenly covered. I thought the flavor was just right. I used my George Foreman grill too - came out great!

Stuffed Celery

Reviewed: May 28, 2004
I thought this was okay. Nothing fancy. It definately goes better as an appetizer than a side dish. I might make it again for parties.

Seafood Stuffed Mushrooms

Reviewed: Jan. 2, 2005
I thought these were pretty good. I made them for my New Years Eve party and they were well received. I followed some other suggestions and baked them at 350 for about 20 minutes. Next time I may cut back on the dip mix - the taste was just a little too oniony. Thanks!

Honey Oat Beer Bread

Reviewed: Jan. 13, 2005
This was pretty good, but it was missing something that I can't put my finger on. It tasted good toasted with butter. Maybe I'll add more sweetness next time. Thanks!

Potato Pouches

Reviewed: Sep. 19, 2004
Well, this gets an A for taste, but an F for presentation. I had trouble with the potatoes sticking to the foil. Maybe next time I'll try spraying the foil with cooking spray first. I also left out the salt and it tasted great without it!

Beer Cake I

Reviewed: Mar. 29, 2004
This was fabulous! I made it for my brother-in-law's birthday and everyone was asking me for the recipe. I frosted it with a cream cheese frosting also found on this site - a great combination, thanks!

Chicken Satay

Reviewed: Jan. 3, 2006
This was fabulous! I didn't change a thing, and let the chicken marinate for almost 24 hours. I couldn't find skewers in my grocery store, so I put the chicken in a baking dish and baked at 350 for about 30 minutes. Then I served with toothpicks, and peanut sauce from the Best Peanut Sauce recipe on this site. It got rave reviews at my New Years Eve party. I'll definately make this again - thanks!

Abby's Chicken Rollatini

Reviewed: Oct. 13, 2005
I made this for a dinner party and everyone loved it! I used minced garlic from the jar and put about 1/2 tsp on each chicken breast. I also increased the amount of butter for each one - I used a heaping teaspoon. All in all, a wonderful recipe. Thanks!

Aunt Millie's Broccoli Casserole

Reviewed: Dec. 7, 2004
I brought this to Thanksgiving dinner this year and it got huge hits. I used fat free cheddar instead of American cheese, and I used fat free mushroom soup and omitted the salt. Everyone loved it - thanks!

Creamy Spinach Casserole

Reviewed: May 2, 2004
I thought this was very good. I used cream of mushroom soup, and I added a little sprinkling of parmesan cheese. I also forgot to chop the onion, so I added a little onion salt. Made it kind of salty, but I'll know for next time! Thanks!

Cheesy Spinach Lasagna

Reviewed: Mar. 21, 2004
This tasted great! I made it a little healthier by using nonfat cottage cheese, lite cream cheese and nonfat mozzarella. My fiance said it was one of the greatest meals I've made! Thanks!

Egg and Cheese Puffs

Reviewed: Jul. 28, 2005
I made these for a retirement brunch at work and everyone raved about them. They taste like a crustless mexican quiche. The cupcake liners were a great suggestion. The ones I made without the liners didn't make it out of the pan!

Caribbean Chicken over Coconut Rice

Reviewed: Nov. 5, 2004
My husband and I loved this! My husband is from the Caribbean and was a little skeptical, but both the chicken and rice were delicious. And hubby requested that from now on, I always cook rice in coconut milk! Thanks!

New Orleans Shrimp

Reviewed: Apr. 25, 2004
I thought this was very good although spicier than I thought it would be. Next time maybe I'll only use 1/2 a green pepper - the man didn't like that so much. I served it with dirty rice which was a great compliment. Thanks!

Homesteader Cornbread

Reviewed: Jan. 18, 2006
This was really good - went perfectly with the chili that I served with it. I followed others' suggestions and switched the cornmeal and flour amounts. I also let the cornmeal soak in the milk (I used soy) for 10 minutes. I kept the prescribed sugar amount, but used splenda instead. It tasted great, and got many compliments - thanks!

Brie and Cranberry Pizza

Reviewed: Jan. 3, 2006
I thought this sounded great from the recipe, but when I saw it baking I was a little skeptical. I used raspberry preserves, and I used the whole jar and still didn't have enough to cover the dough. I popped it in the oven anyway, and the cheese and jam all ran together. It was difficult getting it out of the pan without the cheese sliding off the dough. I served it at my party anyway, and though it was messy, everyone raved about it. Maybe next time I'll let it cool in the pan a little longer. Thanks!
