As far as taste goes, this recipe is delicious! I did encounter a few problems with it though. Apparently an hour wasn't really long enough to soften the potatoes, so when I tried scooping out the insides, the skins got a little butchered. So I did away with the skins and served it as is. I also used a blender since the potatoes weren't soft enough to use a hand mixer. I also used reduced fat sour cream, fat free cheddar cheese, and soy milk. But like I said - the taste couldn't be beaten!
