Blackened Tuna

This was my first attempt at making any kind of fish and it turned out beautifully. I was a little stingy on the cajun seasoning because I wasn't sure how the fish would absorb it. But it tasted great and I'll add a little more next time. Thanks!

Spicy Garlic Lime Chicken

I thought this was pretty good. Definately easy to make. My chicken looked pink for a long time, so I overcooked it a little which made it slightly dry. But other than that, I thought it was really good - I'll make this again. Thanks!

Fondue Bread

I was a little skeptical about this while I was making it because my dough didn't seem to pull together well. I think I used too much flour - next time, I'll only use 3 cups or so. Plus, the dough was too elastic to roll out to the correct measurements, so my loaf was a little small. But it baked up wonderfully and tasted AWESOME. It was gone in minutes at my New Years Eve party. I'll definately make again, just with less flour. Thanks!

Seafood Stuffed Mushrooms

I thought these were pretty good. I made them for my New Years Eve party and they were well received. I followed some other suggestions and baked them at 350 for about 20 minutes. Next time I may cut back on the dip mix - the taste was just a little too oniony. Thanks!

Paula's Bread Sticks

These were pretty good. I made them for a dinner party - to go along with the lasagna. I may experiment with more melted butter, and different herbs sprinkled on top. This time, I just stuck to parmesan cheese. I'll make these again - thanks!

Oatmeal Toffee Cookies

I made these to bring to a 'Christmas cookie exchange' and they were great! I followed recipe exactly (baked about 15 minutes in my oven) and they turned out perfectly! Recipe doubles easily too :-)

Aunt Millie's Broccoli Casserole

I brought this to Thanksgiving dinner this year and it got huge hits. I used fat free cheddar instead of American cheese, and I used fat free mushroom soup and omitted the salt. Everyone loved it - thanks!

Cooking Light magazine's Mexican Chicken Casserole

My husband and I both loved this recipe! It definately lacked presentation, but more than makes up for it in taste. Next time, I may use 10 inch tortillas and only use 1 per layer.

Apple Stuffed Chicken Breast

I thought this was excellent - my hubby didn't though. He said he expected it to be sweeter, but he didn't know I was using Granny Smith apples! He told me the next time to "jazz it up a little". Maybe I'll try it with a sweeter apple next time. Personally, I wouldn't have changed a thing!

Crab Fried Rice

This was pretty good, although I made some changes. I made it with brown rice, and realized I didn't have any garlic, so I omitted the salt and added in garlic salt. I didn't have any green onions, so those were out. I added low sodium soy sauce and some paprika and black pepper. Tasted great!

Famous Butter Chicken

I don't know what I did wrong, but this didn't turn out well for me. I used Toll House crackers from Keebler and they just got all soggy in the melted butter. It tasted like plain chicken in a mushy breading. I might try this again and see if it comes out differently.

Banana Coconut Loaf

This was excellent! I didn't have any coconut, so I substituted coconut milk. It made the bread sweet, but it tasted great. I'll definately make this again.

Caribbean Chicken over Coconut Rice

Garlic Ranch Chicken

I thought this was pretty good, and definately easy. I used the actual ranch dressing since it was all I had. After marinating, I baked the chicken at 350 for about 45 minutes - I didn't want to clean up the mess that would've been left on my George Foreman grill! Thanks!

I thought this was pretty good - a great way to spice up ordinary chicken. Next time I may cut back on the cajun seasoning just a touch - I'm not a huge spicy food person. I served over brown rice. Thanks for sharing!
