Cookies 'n' Creme Fudge

Great and easy to make! I made it gluten free by using Glutino's gluten free chocolate vanilla creme filled sandwich cookies. I cut the cookies with a serated knife and that worked perfectly. My supermarket was out of white chocolate baking squares, so I used 3 cups of hershey's white chocolate chips. I will definitely make this again!

Easy Banana Cream Pie

I thought this was great, but I did make some changes. First, I made my own crust with gluten free graham crackers and melted butter. Then, I only used 1 package of vanilla pudding and added 2 single serving sized containers of banana flavored fat free yogurt. Next time, I may also add a little banana extract as I really love the banana flavor to come through. I followed the recipe for everything else. This was great - I'll make this again!

Thai Chicken Pizza

I would probably give this 4.5 stars if I could. I made this with Bob's Red Mill gluten free pizza mix. I didn't have a pizza tray, so I shaped the dough into a rectangle to fit on a cookie sheet. I probably should've used more peanut sauce because of this, but it was still good. I also used the full amount of peanut butter because I LOVE peanut flavors in my Thai food. The chicken was just the right amount and I didn't do anything to it except grill it beforehand. Thanks!

Authentic Kicked-Up Syrian Hummus

This recipe is excellent! I love that it's easy to double for parties - I just make sure that I make 1 batch at a time - otherwise, my blender doesn't blend too well. Many people have asked me for this recipe. Thanks for sharing!

Simply Swordfish

I thought this was great! I didn't really measure the spices or the lemon juice. I squeezed fresh lemon over both sides of a 1lb swordfish steak - about half a lemon. Then I sprinkled both sides of the fish with lemon pepper and dill weed until it was evenly covered. I thought the flavor was just right. I used my George Foreman grill too - came out great!

I thought these were great! I followed some others' suggestions and added old bay seasoning - but kept everything else as is. This is an easy, quick and healthy recipe - I'll definitely make again :-)

Cornish Game Hens with Garlic and Rosemary

This was excellent and VERY juicy. I think next time I may make a rub with rosemary, lemon pepper, tarragon, basil and thyme and rub that on the outside of the bird - it definately got more flavorful towards the center.

Ginger Glazed Mahi Mahi

This is a very good and forgiving recipe. I realized half way through that I didn't have enough soy sauce, so I just used what I had - about 1 tsp. It wasn't missed though. I also didn't let the sauce achieve a good 'glaze' consistency, but it was still really good when poured over the fish.

Homesteader Cornbread

This was really good - went perfectly with the chili that I served with it. I followed others' suggestions and switched the cornmeal and flour amounts. I also let the cornmeal soak in the milk (I used soy) for 10 minutes. I kept the prescribed sugar amount, but used splenda instead. It tasted great, and got many compliments - thanks!

This was a huge hit at Christmas dessert. I made 2 - one for Christmas Eve, and one for Christmas. My sister ate the entire one on Christmas Eve! I'll definately make this again - don't change a thing!

Brie and Cranberry Pizza

I thought this sounded great from the recipe, but when I saw it baking I was a little skeptical. I used raspberry preserves, and I used the whole jar and still didn't have enough to cover the dough. I popped it in the oven anyway, and the cheese and jam all ran together. It was difficult getting it out of the pan without the cheese sliding off the dough. I served it at my party anyway, and though it was messy, everyone raved about it. Maybe next time I'll let it cool in the pan a little longer. Thanks!

Chicken Satay

This was fabulous! I didn't change a thing, and let the chicken marinate for almost 24 hours. I couldn't find skewers in my grocery store, so I put the chicken in a baking dish and baked at 350 for about 30 minutes. Then I served with toothpicks, and peanut sauce from the Best Peanut Sauce recipe on this site. It got rave reviews at my New Years Eve party. I'll definately make this again - thanks!

Abby's Chicken Rollatini

I made this for a dinner party and everyone loved it! I used minced garlic from the jar and put about 1/2 tsp on each chicken breast. I also increased the amount of butter for each one - I used a heaping teaspoon. All in all, a wonderful recipe. Thanks!

Egg and Cheese Puffs

I made these for a retirement brunch at work and everyone raved about them. They taste like a crustless mexican quiche. The cupcake liners were a great suggestion. The ones I made without the liners didn't make it out of the pan!

Empanadas

These were a huge hit at my work luncheon - a couple people asked me for the recipe. I followed the directions exactly, and used apple jelly. Be sure not to fill them too much or the jelly spews out. Also, be sure to pinch the seams tightly. I'd also recommend lining your cookie trays with parchment paper. I'll definately make these again - thanks!

Double-Cheese Meat Loaf

This is excellent! I followed the directions exactly except that I used fat free mozz. cheese. It didn't really hold together as a loaf, and pretty much came out as a mess when I dished it out, but the taste more than makes up for looks. I'll definately make this again!

It's Chili by George!!

My husband and I loved this - a great compliment from him - a relocated Texan. I did make a few changes. I scaled it down to 5 servings since it was just the 2 of us. I omitted the tomato juice and added 2 cans of diced tomatoes. I kept the full amount of onion and beans, but omitted the green pepper since hubby doesn't like them. I added some red pepper flakes, and simmered it on the stove for about 3 1/2 hours. Tasted amazing - perfect for a snowy day. Thanks George!
