Sweet Potato, Carrot, Apple, and Red Lentil Soup
Wow! What a delight! I was looking for a lentil soup recipe and came across this gem. Thankfully it worked our just right that I had all the recipe on hand and needed to use the produce items. For my soup, I didn't blend it as the recipe recommends, but rather kept it like a stew as others did. I'm so glad I did! I love the texture and much prefer it to the creamy-style soups. I omitted the plan yogurt. The soup really didn't need it in my opinion. I used shredded carrots and green lentils as that is what I had on hand. This soup turned out LOVELY and it was super easy! Just a lot of dicing and throwing into a pot! Putting this one in my Keepers folder!

Baked Salmon II
I multiplied this recipe by 1.5 because we had an additional salmon filet. The recipe was delicious! I made a couple changes: I too thought that there was way too much olive oil! In the future, I will cut down to probably about half of the amount recommended. I didn't do the foil packet method, rather I left the filets in the glass dish that I marinated them in and covered with foil (so much less work!!) and that turned out great. I would make again just with less olive oil next time. Great, super easy and quick recipe for the family dinner!

Healing Cabbage Soup
I was honestly hesitant about this soup. It seemed really basic and I figured it wouldn't be all that great. I WAS WRONG! This soup turned out really delicious! It was a great way to use up the cabbage in my fridge. I added an extra teaspoon of garlic, celery, and carrots, all of which I sauteed in the beginning with the onions. I also added about 2 tsp. of Italian seasoning and an extra tsp of black pepper. YUMMY! This is great since it is all veggies, it worked out great for my Weight Watchers points!! WOO HOO! :D
