Cranberry Orange Loaf

So pretty and very moist; the orange flavor pronounced. I thought the cranberries were too sour, but my husband liked it that way. The tart flavor mellowed out the next day. Don't like nuts, so left those out, and I'm at an elevation of about 7000 ft, so lowered the cook time to 45 min, and it was perfect. If it comes out dry, you're definetly doing something wrong.

Lemon Horseradish New Potatoes

I've made this a number of times, and everyone loves it. Since I usually have them on hand, I use medium sized red potatoes, quartered and boiled for 15-20 minutes, and then just top with the sauce. Simple and packed with flavor.

Peanut-Ginger Marinade

I've been using a simmilar recipe for years, the only differences being the use of rice wine vinegar instead of plain white, and I always use whole boneless, skinless thighs, (skipping the skewers) simply because my husband prefers dark meat. I'm too lazy to actually grate my ginger, so I just use the grated stuff from the jar (but not dried ground). Wonderful flavor!

Jollof Rice

Homey comfort food. To serve 3, I halved the recipe using 5 bone-in chicken thighs, but I removed the skin first. Not something I would make for company, but good for an easy one-pot weeknight dinner.

Avocado Salsa

I took the suggestion of making a wrap with this for an easy dinner. I grilled a couple of chicken breasts, sliced them up, and folded them into flour tortillas with about 2/3 cup of the salsa in each. I also used, instead if the oregano, about 1/2 cup fresh chopped cilantro, and added in 1 tsp groung cumin. Very good.

Cream Cheese Ranch Potatoes

These were great. Instead of making them into mashed, I combined all the inredients in a large bowl, then tossed in red potatoes that I'd chopped into 1 1/2 inch pieces an boiled until tender. I used half the butter called for, just because it didn't seem to really need it prepared this way. You can't go wrong...who doesn't like ranch?

Busy Night Turkey Taco Soup with Avocado Cream

I feel a little like the odd man out after reading all the other positive reviews, but I wasn't crazy about this soup. I hoped the combination of ingredients would meld into something delicious, but it still just tasted like a bunch of canned stuff mixed together. I'm glad that so many others have enjoyed it, thanks anyway!

Fudge Truffle Cheesecake

Take the name of the recipe very, very seriously. I had in mind a chocolate cheesecake, but this thing was just a monster! Incredibly dense; my husband accused me of trying to kill him with it. While I appreciate it for what it was, it was just too potent for me, and I think I'll keep looking for a more standard recipe. Thanks anyway, it was fun!

Miss Bettie's Zesty Grilled Corn

I didn't use this with corn on the cob, instead making it a sauce to stir into frozen corn. Maybe grilling it would have imparted better flavor...it just tasted like corn and mustard. Don't think I'll retry.

Baked Pork Chops I

This was the first recipe in which I've tried baking chops, so was in admittedly unfamiliar territory. I was disappointed in the cooking method...the oven time (which I even reduced by 1/2 hour) left my thick chops very tough, and the sauce poured over for the last portion of cooking sogged up the crust pretty badly. I'm sure that some tweaking would have better results, but the overall flavor doesn't have me motivated to bother. Just not to my taste, I guess.

Garlic Ranch Chicken

I was hoping for ranch chicken, but it the flavor seemed to disappear during grilling, and what was left was pretty bland. Maybe using a dry ranch seasoning packet as a rub would have been better...but I guess that would be a whole different recipe. This was not a repeater for me.

Connie's Zucchini "Crab" Cakes

Personally, I thought this was an okay recipe. I experimented on it while my zucchini-hating husband was out of town. But I know that it would be wasted effort to get him to enjoy it, so I won't put the effort into making it a second time for him. (And it tastes like zucchini patties, not crab.)

Cauliflower Casserole

Well, once again, a vegetable recipe that I enjoyed, but my husband wouldn't touch. My advice: if your people won't eat cauliflower prepared this way, just give up, there is no hope. I didn't have any problems with the recipe, although I would say that if you're not big on heat, to go easy on the red pepper flakes, it was pretty spicy. Thanks Betty.

Roasted Vegetables

This isn't one I'd repeat, it was a little bland. I found a simmilar recipe that I prefer which was a little more flavorful, with lots of fresh garlic and lemon zest, some cherry tomatoes and kalamata olives. But I suppose the beauty of roasted veggies is that you can change it however you'd like to suit your taste.

Better Than Sex Cake II

My husband and I didn't like it, so I gave it to my brother, and he loved it. To me, it was tooth achingly sweet (literally-ouch!) and very soggy. The amount of sauce poured over the cake left it just mushy...but I didn't let it chill before I tried it, so now I'm wondering if that would have firmed it up at all...still, not one I'll bother with perfecting. Caramel Shortbread Squares

This has potential. I made this awhile back, and looking at the other reviews I'm tempted to try again for better results. My shortbread crust was very thick and crumbly (as in it just fell apart when cut), with a raw flour taste, and it didn't want to stick to the caramel. I think that was my main problem, and if I measure the flour with a lighter hand, poke some holes in it with a fork, and bake it a little longer, that might do the trick. The caramel didn't get too stiff, as some others had trouble with, and my chocolate stuck just fine. It sure looks pretty in the book! Worth fiddling with to get just right, I'll keep trying.

Black Bean and Corn Salad II

This is pretty good, but look at the recipe for avocado salsa by Barbara Vinson. Add a can of beans and fresh cilantro to that one, chop it a little chunky, and you've got two very simmilar recipes. I've tried both, and I like the dressing on Barbara's better...just more flavor.

Banana Pudding IV

I had my doubts, thinking maybe it would taste like simple packaged pudding with bananas mixed in. But I made it exactly as the recipe called for and it was great. I sliced the bananas lenthwise to get long, thin strips, which just meant I had less pieces to lay down to cover the pan. The only change I'll make next time is to use a larger tub of Cool-Whip, putting the same amount in the mixture, but leaving more to use for the finish. Oh, I used 1/3 less-fat cream cheese, 2% milk, and fat-free condensed milk, it came out thick and creamy and you'd never know it had a little less fat. Fat free Cool-Whip would help out even more, I bet. Thanks, Patricia, I was pleasantly suprised!

Potato and Shiitake Mushroom Gratin

This was excellent! I used all button mushrooms, sliced, and double the amount of fresh rosemary, and it was so so SO good. I halved it for an 8x8 inch dish (small family), but will definetly be making this full-sized for company. Good good good. I'm so happy.
