Cola Pot Roast II

Reviewed: Apr. 15, 2004
Very nice flavor, it's a keeper. I used a chuck roast, twice the garlic, and the whole package of gravy. Once the meat was removed from the pan, I poured the gravy thru a strainer into a saucepan (I'd chopped my carrots and celery finely to be used only for flavor, not as a side dish, so they got discarded). I added to that 3 Tbs cornstarch combined with 2 Tbs water, and brought the gravy to a boil to thicken it up substantially. Without the cornstarch it was a little too runny for my taste.

Eggnog Quick Bread

Reviewed: Apr. 15, 2004
The eggnog flavor really comes thru on this bread, very nice. I had forgotten to buy the rum extract, but made it anyway with fine results. I'm going to make sure to use it next time, though, just to give it that much better flavor. Looking forward to finding out what Mary intended it to taste like.

Cinnamon Bread I

Reviewed: Apr. 15, 2004
This is a very nice quick bread recipe. It's not anything fancy, but since I usually have all the ingredients on hand, it's a good breakfast standby for unexpected overnight guests (does anyone else's in-laws do that to them?) Buttermilk isn't a staple in my house, so I just use the milk and vinegar mixture with great results. (Maybe if I stop feeding them they'll stop coming...:)

Cheddar Bay Biscuits

Reviewed: Apr. 15, 2004
This is THE recipe, and it makes me so happy! Not to mention everyone who gets to eat them. I make mine a little bigger (cause I'm a major pig for these things), and just increase the bake time by a few minutes, until golden brown. And usually what I do, to serve my family of four, is cut the recipe in half and bake them in my toaster oven on the small baking sheet that came with it. That's an ideal way to reheat them, too, so they'll still have the same texture as when they were freshly baked. Thank you SO much, Cookie!

Mahogany Chicken Wings

Reviewed: Apr. 15, 2004
These are delicious, and the recipe is a good cooking guideline for trying wings with other sauces. Do yourself a favor and be sure to line your baking pan with foil, since some of that sauce can be a chore to scrub off later.

Bacon and Cheddar Stuffed Mushrooms

Reviewed: Apr. 14, 2004
I've tried this and Angie Zayac's "Mouth-Watering Stuffed Mushrooms", and it's a toss up. That one is very creamy, this one is more savory with the bacon and cheddar. I like them both. Really good.

Cream Peas

Reviewed: Apr. 14, 2004
This one is just "okay" for me, but it made my husband pretty happy, so I'll make it again. Needs a little more something to the flavor...maybe lemon pepper like another person suggested...hmmm.

Potato and Shiitake Mushroom Gratin

Reviewed: Apr. 14, 2004
This was excellent! I used all button mushrooms, sliced, and double the amount of fresh rosemary, and it was so so SO good. I halved it for an 8x8 inch dish (small family), but will definetly be making this full-sized for company. Good good good. I'm so happy.

Banana Pudding IV

Reviewed: Apr. 14, 2004
I had my doubts, thinking maybe it would taste like simple packaged pudding with bananas mixed in. But I made it exactly as the recipe called for and it was great. I sliced the bananas lenthwise to get long, thin strips, which just meant I had less pieces to lay down to cover the pan. The only change I'll make next time is to use a larger tub of Cool-Whip, putting the same amount in the mixture, but leaving more to use for the finish. Oh, I used 1/3 less-fat cream cheese, 2% milk, and fat-free condensed milk, it came out thick and creamy and you'd never know it had a little less fat. Fat free Cool-Whip would help out even more, I bet. Thanks, Patricia, I was pleasantly suprised!

Black Bean and Corn Salad II

Reviewed: Apr. 14, 2004
This is pretty good, but look at the recipe for avocado salsa by Barbara Vinson. Add a can of beans and fresh cilantro to that one, chop it a little chunky, and you've got two very simmilar recipes. I've tried both, and I like the dressing on Barbara's better...just more flavor.

Caramel Shortbread Squares

Reviewed: Apr. 14, 2004
This has potential. I made this awhile back, and looking at the other reviews I'm tempted to try again for better results. My shortbread crust was very thick and crumbly (as in it just fell apart when cut), with a raw flour taste, and it didn't want to stick to the caramel. I think that was my main problem, and if I measure the flour with a lighter hand, poke some holes in it with a fork, and bake it a little longer, that might do the trick. The caramel didn't get too stiff, as some others had trouble with, and my chocolate stuck just fine. It sure looks pretty in the book! Worth fiddling with to get just right, I'll keep trying.

Better Than Sex Cake II

Reviewed: Apr. 14, 2004
My husband and I didn't like it, so I gave it to my brother, and he loved it. To me, it was tooth achingly sweet (literally-ouch!) and very soggy. The amount of sauce poured over the cake left it just mushy...but I didn't let it chill before I tried it, so now I'm wondering if that would have firmed it up at all...still, not one I'll bother with perfecting. Thanks though, Elaine.

Roasted Vegetables

Reviewed: Apr. 14, 2004
This isn't one I'd repeat, it was a little bland. I found a simmilar recipe that I prefer which was a little more flavorful, with lots of fresh garlic and lemon zest, some cherry tomatoes and kalamata olives. But I suppose the beauty of roasted veggies is that you can change it however you'd like to suit your taste.

Cauliflower Casserole

Reviewed: Apr. 14, 2004
Well, once again, a vegetable recipe that I enjoyed, but my husband wouldn't touch. My advice: if your people won't eat cauliflower prepared this way, just give up, there is no hope. I didn't have any problems with the recipe, although I would say that if you're not big on heat, to go easy on the red pepper flakes, it was pretty spicy. Thanks Betty.

Connie's Zucchini "Crab" Cakes

Reviewed: Apr. 14, 2004
Personally, I thought this was an okay recipe. I experimented on it while my zucchini-hating husband was out of town. But I know that it would be wasted effort to get him to enjoy it, so I won't put the effort into making it a second time for him. (And it tastes like zucchini patties, not crab.)

Garlic Ranch Chicken

Reviewed: Apr. 14, 2004
I was hoping for ranch chicken, but it the flavor seemed to disappear during grilling, and what was left was pretty bland. Maybe using a dry ranch seasoning packet as a rub would have been better...but I guess that would be a whole different recipe. This was not a repeater for me.

Baked Pork Chops I

Reviewed: Apr. 14, 2004
This was the first recipe in which I've tried baking chops, so was in admittedly unfamiliar territory. I was disappointed in the cooking method...the oven time (which I even reduced by 1/2 hour) left my thick chops very tough, and the sauce poured over for the last portion of cooking sogged up the crust pretty badly. I'm sure that some tweaking would have better results, but the overall flavor doesn't have me motivated to bother. Just not to my taste, I guess.

Miss Bettie's Zesty Grilled Corn

Reviewed: Apr. 14, 2004
I didn't use this with corn on the cob, instead making it a sauce to stir into frozen corn. Maybe grilling it would have imparted better flavor...it just tasted like corn and mustard. Don't think I'll retry.

Fudge Truffle Cheesecake

Reviewed: Apr. 11, 2004
Take the name of the recipe very, very seriously. I had in mind a chocolate cheesecake, but this thing was just a monster! Incredibly dense; my husband accused me of trying to kill him with it. While I appreciate it for what it was, it was just too potent for me, and I think I'll keep looking for a more standard recipe. Thanks anyway, it was fun!
