Chocolate Revel Bars

These were great! I made it for a gathering, and everyone was happy. I left out the nuts (as I always do), used a bag of milk chocolate chips and fat free condensed milk...a delicious bar cookie worthy of sharing. Thanks!

Caramelized Baked Chicken

The flavor was great, but my sauce was like water! I removed the wings to a bowl with a slotted spoon, then let the sauce continue to bake for another 30 minutes, then poured it over the chicken. That did the trick. Next time I will try using a baking sheet; maybe being spread out a little more will help the sauce reduce faster. I'm also thinking of adding a Tbs or so of chili sauce.

Awesome and Easy Creamy Corn Casserole

Like a very moist cornbread...pretty good. I didn't expect my family to be that crazy about it, but they all told me to make it a repeater. Personally, I liked it better munching the cold leftovers.

Virginia Apple Pudding

I made mine in a round 2 quart dish, and the deeper center didn't firm up (suspected that might happen.) Aside from that, this was alright...like another reviewer said, it's more like a coffee cake. Not outstanding, so I don't think I'll try it again.

Asparagus Angel Hair Pasta

I finally psyched myself up to making this, and the whole time I kept thinking "I don't know about this..." It is a strange combination, but the end result had good flavor. I'd diced the avocado and tossed it in, and used mozzeralla instead. I'd make this again for myself, but my husband didn't like it so much.

Cod au Gratin

We thought this was great. Even my three year old scarfed it. Good in a comfort food kind of way. I read the other reviews and was about to take some advice and add mustard powder and garlic to the sauce, but at the last minute decided to use 1/2 tsp Old Bay (instead of salt and pepper or anything else); I was really happy with the result. Perfectly seasoned.

Baked Tomatoes Oregano

Pretty good. I love tomatoes, so the recipe was guaranteed to please me, but it did need a little more flavor. I'll be making this again, maybe with a little more seasoning. I've seen a similar recipe that has fresh rosemary and lemon zest in it, and wonder if those would be nice additions.

Chicken Papadoris

This was alright. I won't make it again as is; the chicken came out pretty dry (which is my own fault, but nevertheless...) I had served this over white rice, and did think the sauce with the rice was very good. So I'm going to tweak it a little and hang onto the recipe as a curried rice side dish, leaving out the chicken. I thought the flavors went well together, it wasn't bland, or for that matter, too spicy, and the pine nuts were a pleasant addition. Definetly worthy of a little fiddling with.

Easy Focaccia

I'm so happy to be able to make this now! This was delicious. I doubled the parmesean and just added it and the rosemary right into the dough, so it was blended throughout. Left the pan in the oven, and the time called for to bake the bread, starting from a cold oven, was just right. Thanks Jack!

Green Salsa

This was fresh, tangy, and flavorful. I skipped the shallots, doubled the green chiles, cilantro, and jalapeno, and added 2 finely diced large avocados and a couple Tbs lime juice (for flavor and to keep the avocado from browning). Taking the seeds out of the jalapenos left the salsa without any heat at all, so as a personal preference, next time I'll just leave them in to get a little spice.

While I can see why other people love this, I don't think I'll repeat it. It just wasn't as fabulous as I'd hoped, but okay. I might try doubling the sauce to serve as a side, maybe with white wine instead...

Kathy's Roast and Vegetables

Easy and satisfying. I used chuck, skipped the browning (the sauce and long cook time seemed like it would make this unnecessary, and it was), and added fresh mushrooms. The gravy was very soupy, and there was a lot of it, so at the end I took the meat and veggies out, stirred in about 3 or 4 Tbs cornstarch mixed with a little cold water, and that thickened it into a perfect, thick gravy. Which we sopped up with crusty french rolls. This was delicious!

White Chocolate Orange Cookies

These are wonderful with the delicate orange flavor. I made a few changes per other members advice. I like my cookies thick, soft, and chewy, so I used 1/2 tsp each baking soda and powder, made sure my butter was room temp, and packed the flour into the measuring cups. The latter ensures a slightly firmer dough that doesn't spread in the oven. And I did use only one cup chips...that was plenty for this small batch of cookies. (I got two dozen generously sized cookies.)

Casa Dressing

Pretty good. I made this to toss on a simple side dish of sliced avocado and fresh roasted green chiles, and the only thing I'm going to do differently next time is to cut the salt in half. With the mayo and lime, it was just too much, and I like stuff salty. But great flavor, especially for the simplicity. I love cumin and cilantro. Thanks for the recipe!

Seafood Enchiladas

With a little doctoring, this was great. The 9x13 in dish called for seemed way too roomy for just 6 enchiladas, so instead they went into a 7x11 in dish, and that was more snug--the sauce stayed where it was intended to. No problem with it being too thin, as some other reviewers had trouble with. I added 2 cloves of garlic to the onion, and 1/2 cup sour cream into the seafood. I used all (one lb) imitation crabmeat (don't laugh) and it came out really nicely. The sauce needed something...so it got 1/2 tsp cumin, 1/4 tsp coriander, and a dash or two of cayenne. And before sticking it in the oven, I garnished it with a handful of sliced black olives. Very happy with this one. Yup.
