Curried Cream of Any Veggie Soup

This one just didn't impress me, although I love the idea of adding curry. I'm going to try to find a creamier soup recipe, and add curry to that. This soup seemed a little too thin for my taste, although I used 2% milk and doubled the flour.

Pumpkin Pie Cake I

I love pumpkin pie, and this is a great twist. The only thing I did different from the recipe was to mix the cake mix and butter together before topping on the pumpkin mixture. I loved the results!

Grandmother's Oatmeal Cookies

This is a good, basic oatmeal cookie, and I'll keep the recipe. Maybe since I used butter, the first batch really spread, way too much for me. I like fat cookies, so to fix that, I put an extra cup more flour in the dough, and it worked.

Chewy Chocolate Cookies I

I read the reviews first, and wanted to make sure the cookies didn't flatten out while baking. I added half a cup more flour to the recipe, and they came out soft and chewy, and about as high as I'd like. (Maybe 1/4 cup more flour next time to get them really fat...) I was out of chips, so skipped that, and they were still great as basic chocolate cookies. And since they were plain on the inside, I made up for it by rolling the cookies in powdered sugar before baking. That came out well. You could add anything to this dough; the idea of orange extract and zest crossed my mind, or maybe mac nuts with almond extract.

Dr. Michael's Yeasted Cornbread

This loaf had georgeous color and a very high rise, and a light, soft texture. Love what the cornmeal added. I had to modify it since I don't have a bread machine, and found that it didn't need all the flour called for. I warmed the milk, dissolved the yeast and sugar in it, then added the rest of the wet and then the dry ingredients. I kneaded it with my Kitchenaid for about 10 min, and baked it in a greased loaf pan at 375 for 35 min. When I took it out of the oven, I brushed the crust with melted butter, which I think I'll start doing with every bread recipe.

Pumpkin Swirl Bread

Very good! Very moist, also. The bake time was right on...everything worked out perfectly. There wasn't so much a swirl of cream cheese as there was ribbons and pockets, alot of it blended into the pumpkin mixture, but that was what made it so moist!

Beef and Bean Chimichangas

Bread Machine Cardamom Bread

I made this using my KitchenAid mixer, and found that I'd made a mistake dumping in all the flour called for, it could have used maybe as much as half a cup less. It was way too stiff, and the resulting loaf wasn't as light as I prefer. I made some deep slashes in the dough before proofing in the pan, and after baking, brushed all over with butter. It was a very pretty bread, and the flavor was simple; mildly sweet. But the cardamom didn't show thru like I'd hoped.

Cheese Cake Cups

So simple! For a pretty topping, I melted some milk chocolate chips and piped a very thin swirl onto the unbaked filling, ran a toothpick back and forth to make a spiderweb-ish pattern, then baked. I was worried about the centers being so jiggly after only 15 minutes, but after chilling it was perfect. Next time I might try making the crust like another reviewer suggested, by crushing the cookies and mixing with butter like a traditional cheesecake crust. A great recipe for taking to gatherings.

Basic Ham and Bean Soup

I had a little trouble with the beans not being tender. I'd soaked them overnite, then cooked the soup for two hours...not quite enough time. Otherwise I thought it was a good recipe, and I'll repeat it with a few adjustments. I pureed some of the beans and used less water, omitted the salt and tripled the celery...good flavor.

Magic Cookie Bars from EAGLE BRAND®

Pretty good. Next time I will mix the butter and crumbs together and press into the pan to prevent it from crumbling. I also should have waited until they had chilled before slicing into them, they would have held their shape a little better.

Slow Cooker Lemon Garlic Chicken II

Pretty good with some additions: I used 3lbs thighs; I just think they turn out more moist. I left out the water, added in the zest of the lemon I'd juiced, 1 tsp dried rosemary, and 1/2 tsp dried mustard powder. After about 4 hours on low mine was done. The sauce was delicious, but too soupy, so I thickened it with some cornstarch/water. Seved with cous-cous...not bad at all.

Florentine Artichoke Dip

This was so good. I didn't take anything away from the recipe to change it, but did add 3 green onions, finely chopped, 1/2 tsp seasoned salt, and 1 tsp chopped fresh rosemary. I used Neufchatel, and it was perfect. Next time I think a little cayenne or Tabasco would give it a good kick, and maybe twice the rosemary. I'd made it to test on my husband, and was so happy with the results that I'll definetly be making this for the next party.
