Mexican Rice II

Fantastic! I like to mince 2-3 canned chipotle peppers in adobo sauce and add it to the tomato sauce before adding it to the rice. Adds some heat and a nice smoky flavor. I also like to add 1/2 diced green bell pepper and some drained canned corn. Excellent recipe.

Travis's Turkey Burgers with a Bite

Good and easy. I've made this recipe both with fresh jalapenos and with canned jalapenos when I don't have fresh on hand. Both work fine. I like to add a little chipotle-flavored Tobasco sauce into the mix and melt pepperjack cheese over the top during the last couple of minutes on the grill.

Feta Cheese Turkey Burgers

Mexican Rice

I make this rice frequently, following the recipe exactly except that I add a VERY SMALL amount (less than 1/8 tsp) of Dave's Insanity Sauce to give it a little more kick. If you like a litle (or a lot) of heat, I recommend this rice with the addition of some Dave's.

Angel Chicken Pasta

Excellent. At first, I follewed the recipe exactly, but after the sauce was heated and ready to pour over the chicken, I tasted it and thought the wine flavor was too strong. To dilute it a bit, I added 1/2 can of regular cream of mushroom soup, another 2 oz. of cream cheese, a little Italian seasoning (maybe a teaspoon), another tablespoon of butter, and about 1/3 cup of chicken broth. Also, the only cream cheese I could find with chives was cream cheese with onion and chives, that seemed to work just fine. I also decided to cut the chicken breasts into into large strips instead of keeping them whole. Served it with an Italian-style salad. The result was absolutely fantastic! My wife and I couldn't believe how good it was. I will make it many more times.

Chicken Parmigiana

Excellent. I added garlic powder and Italian seasoning to the bread crumbs, double-dipped each piece (egg then crumbs then egg then crumbs again), and used Classico Spicy Red Pepper spaghetti sauce. Served over angel hair pasta. I did use quite a bit more crumbs (because I double-dipped) and more sauce than the recipe called for. Next time I might serve it on a toasted deli bun for a chicken parm. sandwich! Excellent recipe!
