Aunt Teen's Creamy Chocolate Fudge

I splurged and bought good chocolate, and I think it made all the difference. I also made a butterscotch fudge with pecans. This is a very flexible recipe, so I can't wait to try additional variations.

Sweet Grilled Corn

I don't think I'll ever cook corn a different way again. It's easy to make subtle changes by choosing your own combination of herbs and spices.

Not Your Every Day Smoked Pork Spare Ribs

I made these for Father's Day, and they were a huge hit! We even let them go quite a bit longer in the smoker until the other stuff was done, but they only got more tender.

Eggplant Casserole

I made some significant changes, but it was very good. For the casserole, I used meatloaf (ground veal, beef, and pork) instead of ground beef, a large can of chopped tomatoes instead of fresh tomatoes, and I added fresh basil, garlic, a can of tomato paste, and a half a pound of bowtie pasta. I also changed the topping. Instead of bread crumbs and butter, I used grated romano and mozzarella cheese.

Sticks and Stones Candy Bark

This is a really cool idea, but I changed the ratio of chocolate and butterscotch because I think butterscotch is too sweet. Because I used more chocolate, I used regular raisins - not chocolate covered. Even with my adaptation, people seemed to really like this candy.

Chocolate Brittle Surprise

Everyone is so shocked when I tell them it's made with crackers. It just tastes like delicious chocolate covered toffee. I love the idea of making a toffee without a candy thermometer.

No Bake Peanut Butter Pie

This is so easy and so delicious. I followed some recommendations and made changes. I made the filling with 1 8oz. package of cream cheese, 3/4 c. confectioners sugar, 1 c. peanut butter, and 3/4 container of Cool Whip (I use the rest to top the pie with). I use all low-fat ingredients and all natural peanut butter. I pour it all in a pre-made Oreo crust and decorate with fudge topping.

Beef and Rice Posole

I made this for a Mexican potluck party, and it was a huge hit! However, instead of using beef, I used chicken breast, which I cut into bit-size pieces. I also replaced the water with chicken broth.

Slow Cooker Beef Stroganoff I

I jazzed this recipe up, following the advice of some others. First, I coated the beef with the flour, salt, and pepper and browned it. I added beef broth instead of water; I eliminated the onion and used a packet of onion soup mix instead; I also added one Tbs. of tomato paste and 1 Tbs. of horseradish. I placed fresh thyme and sage while it was cooking, but removed them when I added 2 oz. of onion and chive cream cheese and 2 oz. sour cream.

Barbeque Pork Two Ways

I rubbed a pork tenderloin with salt, pepper, and chicken grill seasoning, and browned the outside before putting it in the crock pot. I also followed the advice of others and added 1 cup of barbeque sauce (Sweet Baby Rays), but I also dilluted a 1/2 cup ketchup with 1/2 cup of white wine. I shredded the pork, and then let cook in the juices the last hour. It was wonderful!

Angel Chicken Pasta

I cut the chicken into pieces and saute it in butter. Then I add the rest of the sauce ingredients into the pan and cook. This way, it is a much faster recipe. It takes about 20 minutes beginning to end.
