Quaker® Oats Oatmeal Scotchies

Reviewed: Nov. 10, 2003
This is one of my favorite cookies. Whenever I make them, even people who are not oatmeal fans like them!

Barbeque Pork Two Ways

Reviewed: Nov. 11, 2003
I rubbed a pork tenderloin with salt, pepper, and chicken grill seasoning, and browned the outside before putting it in the crock pot. I also followed the advice of others and added 1 cup of barbeque sauce (Sweet Baby Rays), but I also dilluted a 1/2 cup ketchup with 1/2 cup of white wine. I shredded the pork, and then let cook in the juices the last hour. It was wonderful!

I don't know how to explain it, but something just wasn't right.

Slow Cooker Beef Stroganoff I

Reviewed: Jan. 17, 2004
I jazzed this recipe up, following the advice of some others. First, I coated the beef with the flour, salt, and pepper and browned it. I added beef broth instead of water; I eliminated the onion and used a packet of onion soup mix instead; I also added one Tbs. of tomato paste and 1 Tbs. of horseradish. I placed fresh thyme and sage while it was cooking, but removed them when I added 2 oz. of onion and chive cream cheese and 2 oz. sour cream.

Beef and Rice Posole

Reviewed: Jan. 8, 2005
I made this for a Mexican potluck party, and it was a huge hit! However, instead of using beef, I used chicken breast, which I cut into bit-size pieces. I also replaced the water with chicken broth.

Raspberry Almond Shortbread Thumbprints

Reviewed: Jan. 8, 2005
They tasted good, but were hard to form because they were too dry. I would reduce the amount of flour next time.

Taste of Home's Morning Glory Muffins

Reviewed: Mar. 22, 2005
This recipe is absolutely work the time, energy, and number of ingredients. I feel like I'm eating a delicious carrot cake rather than a muffin!

Classic Tiramisu

Reviewed: Mar. 26, 2005
This is an okay dessert, but not a true tiramisu, which requires that you make a zabaglione. If you want to make tiramisu much easier, this is a nice option. However, I think it is worth the extra time to make it the more traditional way.

Cranberry Pistachio Biscotti

Reviewed: Dec. 21, 2005
This is an awesome recipe. Although there are a few more steps vs. other cookies, they are definitely worth it. I make them every Christmas and always get compliments.

Russian Tea Cakes III

Reviewed: Dec. 21, 2005
This were a new addition to my Christmas cookies, and I've already had to come back to this website to reprint the recipe for friends. They are a bit difficult to form, but man... are they good!

Chocolate Brittle Surprise

Reviewed: Dec. 21, 2005
Everyone is so shocked when I tell them it's made with crackers. It just tastes like delicious chocolate covered toffee. I love the idea of making a toffee without a candy thermometer.

Aunt Teen's Creamy Chocolate Fudge

Reviewed: Dec. 21, 2005
I splurged and bought good chocolate, and I think it made all the difference. I also made a butterscotch fudge with pecans. This is a very flexible recipe, so I can't wait to try additional variations.

Sticks and Stones Candy Bark

Reviewed: Dec. 21, 2005
This is a really cool idea, but I changed the ratio of chocolate and butterscotch because I think butterscotch is too sweet. Because I used more chocolate, I used regular raisins - not chocolate covered. Even with my adaptation, people seemed to really like this candy.

Spinach Turkey Roll

I was pleasantly surprised by this recipe. It was easier to make than I thought it was going to be. I was also concerned the meat may be dry, but it was delicious!

Eggplant Casserole

Reviewed: Mar. 13, 2007
I made some significant changes, but it was very good. For the casserole, I used meatloaf (ground veal, beef, and pork) instead of ground beef, a large can of chopped tomatoes instead of fresh tomatoes, and I added fresh basil, garlic, a can of tomato paste, and a half a pound of bowtie pasta. I also changed the topping. Instead of bread crumbs and butter, I used grated romano and mozzarella cheese.

Not Your Every Day Smoked Pork Spare Ribs

Reviewed: Jun. 18, 2007
I made these for Father's Day, and they were a huge hit! We even let them go quite a bit longer in the smoker until the other stuff was done, but they only got more tender.

Pig Picking Cake III

Reviewed: Jul. 6, 2007
This was a huge hit for 4th of July. However, because I was bringing it somewhere (and I imagine it isn't incredibly sturdy), I made it in a 13 x 9" pan. I also added 1/2 cup of coconut to the frosting.

Grilled Mahi Mahi

Reviewed: Jul. 20, 2007
I made this for dinner tonight but with some changes. It just seemed silly to use canned tomatoes when Jersey tomatoes are so good in the summer, so I made a fresh pico de gallo and used that instead with about 3 tbs. melted butter and 1/2 cup of white wine. I didn't cover it as it cooked, and it didn't take anywhere near 35 minutes. I also omitted the cheese.

No Bake Peanut Butter Pie

Reviewed: Oct. 29, 2007
This is so easy and so delicious. I followed some recommendations and made changes. I made the filling with 1 8oz. package of cream cheese, 3/4 c. confectioners sugar, 1 c. peanut butter, and 3/4 container of Cool Whip (I use the rest to top the pie with). I use all low-fat ingredients and all natural peanut butter. I pour it all in a pre-made Oreo crust and decorate with fudge topping.
