Was desperately looking for a last minute corn recipe for thanksgiving. This was fantastically simple, great flavor, nothing like the image of mushy creamed corn "pudding" you're used to. It's more like corn with a cream sauce. I don't like the blended yuck kind anyway so if that's what you're hunting for this isn't it.
The cheese gave it just enough extra to stand out. Followed the recipe exact except i had to use a cream substitute of milk and butter (3/4 milk 1/4 butter melted drizzled into milk while whipping) because i didn't have any cream. I'd used golden and white corn which gave it nice color and dimension. Not a fan of creamed corn before, but i love this and my family liked it too. It might come off slightly bland but the flavors kinda kick around on your tongue in layers after you first put it in your mouth (ooh there's a little sweetness! Oh the parm is tangy! Mmm the butter! Ahh the crisp sweet corn... And swallow, repeat) it's a good offset to balance a very savory meal.
