Tiramisu Layer Cake

Reviewed: Dec. 13, 2006
HOLY COW! Awesome and easy! I'm not a big fan of coffee desserts, and I was afraid of this having too strong of a coffee flavor for me- but it was really just perfect! I used a spoon to spoon the coffee mixture over the cakes. This is going to be one of those recipes that I'm famous for, giving my pumpkin cheese roll and cinnamon rolls a run for their money!

Baked Ziti I

Reviewed: Jan. 1, 2006
My husband said 4.7 stars. This was very good, and very easy. I'll be making this again and adding it to my personal recipe collection. Since a few other reviewers said this was a little bland I seasoned the meat with spaghetti sauce seasoning, and I also added an extra Tbs spaghetti sauce seasoning to the sauce.

Very good! It's nice to have something a little different. Even the kids ate it. I'll definately make it again.

Red Velvet Cake I

Reviewed: Dec. 23, 2005
I thought this frosting was wonderful. Since others said it did not thicken well, I used 4 T of flour and 1 T cornstarch instead of 5 T of flour. The milk and flour mixture thickened very nicely. It seems to me that it would have thickened fine with just the flour. Maybe others aren't cooking it long enough? I also added just a pinch of salt (I think almost all frostings are improved with a pinch of salt). Next time I might use a little less sugar (it is VERY sweet). I would also put my sugar in the blender a little first (or use finer grained bakers sugar) as the sugar never melts in the recipe and it is just a tiny bit grainy.

Chicken and Dumplings III

Reviewed: Aug. 13, 2005
I was always taught to simmer dumplings for 10 minutes uncovered, then to simmer 10 minutes covered- without lifting the lid. Even the buscuit dumplings turn out fine this way. If you still find them doughy then cut them smaller.

Cream Cheese Pound Cake I

If you just want something with lots of flavor and lots of sugar this might be for you. I think it would be perfect with a little less sugar and a little less almond. I was wanting to top it with strawberries, but I think they would have gotten lost. Don't eat it hot. It's much better cold.

Tasty Breakfast Burritos

Reviewed: Jul. 27, 2005
My family loved these. I was looking for a recipe I could roll up in foil and throw on the grill for our camping trip. I just put the gravy in the egg mixture instead of on the outside. Everyone loved them, and they were perfect for the camping trip. My 7 year old said, "I could eat these all day long"! I added some butter to the drippings to make a little extra gravy.

Crab Salad III

Reviewed: Jan. 4, 2005
This was excellent. The flavor overpowered the crab so much that I could barely even tell crab was in the recipe. Next time I will double the crab. But still a wonderful salad!

Super Bowl Bites

Reviewed: Mar. 26, 2004
Hmmm... With 5 stars I was expecting something really yummy. These aren't that bad, but certainly not impressive. An OK snack for a bachelor to make for his buddies, but nothing an experienced cook would be proud to serve.

Chocolate Sheet Cake III

Reviewed: Mar. 8, 2004
I lost this recipe years ago and was THRILLED to find it here. One of my all time favorites. It is just awsome on the 2nd day- but never lasts that long. (I always cut myself a piece for the next day and hide it.) People just don't know what they're missing eating this up the 1st day!

Mom's Baking Powder Biscuits

Reviewed: Mar. 6, 2004
This recipe was simple, and the buscuits turned at light and fluffy even at 7,000 ft. I did not adjust the recipe at all, and found the flavor bland. Next time I'll try buttermilk and make them a little thicker. A great base recipe to work with!

This was ok. Nothing spectacular. Nothing wrong with it either, just not a favorite.

Gourmet Chicken Pizza

Reviewed: Nov. 10, 2003
Wow. I'm surprised! I've gotten tired of so many things tasting like ranch dressing... But this was really yummy! I've tried it with several other things, and my favorites- by a long shot- are with Ken's Creamy Tomato Bacon dressing or sun dried tomoato alfredo sauce! Yummmm!

Libby's® Pumpkin Roll with Cream Cheese Filling

Reviewed: Nov. 9, 2003
I have made this dozens of times. It's best with more spices: 2 t. cinnamon, 1 t. pumpkin pie spice and 1/2 t. nutmeg. This is my all time favorite recipe! I think I'm invited to so many holiday parties just because people want me to bring this pumpkin cheese roll. BE SURE TO USE PARAFIN PAPER ON YOUR PAN- this sticks like crazy! Also be sure to ring out the towel very well, and don't undercook the cake. If this is too moist it will stick to the towel and you'll have a mess. Roll the finished cake tightly in plastic wrap, and it will keep it's shape nicely as it chills.

Apple Bundt Cake

Yum! I had a lot of apples to use up and went ahead and put in nearly FOUR cups of apples. I'll never make it with any less! Makes good muffins for packing in kids lunches too.
