Zeke's Tortilla Soup

Reviewed: Jul. 15, 2013
Excellent recipe! I tweaked it for our style and what we had on hand (homemade broth and the chicken used to make it). The only thing I will change for future batches will be to decrease the oregano significantly and probably use tortilla chips instead of making my own.

Ultimate Banana Bread :: America's Test Kitchen

Reviewed: Jun. 15, 2012
Incredible even if you don't have all 6 bananas. Accumulate over-ripe bananas in the freezer and make this amazing treat when you have at least 4. I didn't add the sliced bananas to the top as my sister said they tasted flavorless and might have affected cooking time.

Dry Onion Soup Mix

Reviewed: Apr. 2, 2012
Very nice blend! I added dried chives for the heck of it and even though I didn't have any beef bouillon granules, the taste was really good! The dried onion I have seemed a little too large but worked just fine. If I make a bulk batch I would put the onion flakes, parsley and chives in a food processor and pulse a couple times so it doesn't separate when stored.

Incredible. I don't think I made any changes other than subbing spelt flour for regular. Keeper.

Jalapeno Strawberry Jam

Reviewed: Nov. 6, 2011
This was my first experience with making jam and it turned out beautifully. Unfortunately my jalapenos molded before I got around to making this so I omitted them. My husband and I freaked at the amount of sugar it called for so we stopped at 4 cups. I was afraid it wouldn't gel but not so - It's perfect. Next time I can't wait to make it spicy :)

Delicious!!! No reason to ever buy chai concentrate. I omitted the black pepper but other than that I prepared as written.

Mine turned out flat but that didn't stop us from devouring them. Great shortbread-type flavor.

Chicken Wild Rice Soup

Reviewed: Nov. 6, 2011
Hearty and delicious! Through a shopping error we only had boneless thighs on hand. The extra flavor (gamey-ness) of the thighs really complimented the herbs and veggies even though we're strictly a chicken breast type family. I used leeks because we had them and omitted the creamy soup and it turned out fantastic. We'll make this again and again.

Real Hummus

Reviewed: Nov. 6, 2011
My husband and I made an amped up garlic version and it is out of this world! I also added some diced chipotle (on top, not mixed in) and it is so good I will never buy pre-made again. We were inspired to soak our own chickpeas because this recipe turned out so well.

Ranch Dressing II

Reviewed: Nov. 6, 2011
This is the ranch dressing recipe I've been looking for - herby not sweet and can be thinned with milk or kept thick for dipping. I was out of chives so I upped the onion powder to 1/2 tsp, upped the garlic to 1/2 tsp as well because we're garlic lovers and omitted the pepper due to dietary concerns. Still a very nice flavor profile. I halved the mayo and just thinned slightly with 2 Tbsp whole milk. Perfect!

Tahini Cookies

Reviewed: Nov. 4, 2011
Crumbly, but pretty good. I added flax seeds since I had them but next time I'll add raisins or dates, maybe figs. I really like the wholesome flavor and I think a little more honey and more baking time will help firm them up.

Homemade Flour Tortillas

Reviewed: Sep. 29, 2011
Excellent - I wouldn't change a thing. Except that I used spelt flour with a smidge of xanthan gum to make up for the lack of gluten. Perfecto!

Mexican Sour Cream Rice

Reviewed: Sep. 22, 2011
Add a little bit more flavor and this dish is perfect. I added 1 Tbsp of taco seasoning and used HOT diced green chilies. Also I heard that cilantro gets bitter when chopped so I tore the leaves. Time consuming but I think it makes a difference. Excellent side dish or main dish if you add chopped chicken!

Salsa Chicken

A family favorite already! This is a really simple recipe when you want a flavorful, simple and healthy chicken dish. Goes well with rice and beans ... pretty much like a taco shop dinner but way healthier! A no-fuss, FAST dinner that's in rotation.

Nice! My family loves garlic so this went over well. I used a tablespoon of arrowroot powder to thicken the sauce. Very good.
