When my husband is out of town, my son and I eat a little differently. I also take the opportunity to try new techniques and tonight, a throw-together dinner. Dinner planning started at 4pm, exactly 12 hours after the 2yo started our day. Long, long day on just 5 hours of sleep but my coffee… MORE

About this Cook
I cook nearly every day for my gracious husband and not-too-picky toddler. They make tackling the "What's for dinner?" question a welcome challenge. All the recipes I use I tailor to our preferences: make it from scratch if you can, meat makes a dinner, fresh veggies from the farmer's market, TRY to go easy on the dairy and above all, gluten-free.

Zeke's Tortilla Soup
Excellent recipe! I tweaked it for our style and what we had on hand (homemade broth and the chicken used to make it). The only thing I will change for future batches will be to decrease the oregano significantly and probably use tortilla chips instead of making my own.

Dry Onion Soup Mix
Very nice blend! I added dried chives for the heck of it and even though I didn't have any beef bouillon granules, the taste was really good! The dried onion I have seemed a little too large but worked just fine. If I make a bulk batch I would put the onion flakes, parsley and chives in a food processor and pulse a couple times so it doesn't separate when stored.

Dad's Leftover Turkey Pot Pie
Incredible. I don't think I made any changes other than subbing spelt flour for regular. Keeper.
