Buttermilk Pancakes II
These are simply fabulous pancakes. I didn't have 3 cups of buttermilk, so I replaced one cup with milk and lemon juice, and it's just wonderful. These are dense but fluffy and the 3 cups goes VERY far, much further than the boxed pancake mix. I also want to add that the butter congealed a bit, so I used my blender to mix up all the wet ingredients. And now that it's been a few days and I finally used the rest of it, it's not quite as good as it was fresh. For some reason, the pancakes didn't get fluffy...they stayed pretty thin. They tasted just as good, they just weren't quite the right texture.

Janet's Rich Banana Bread
This recipe is fantastic! I only made VERY slight modifications. I pureed the bananas since my bananas were VERY ripe, I replaced the sour cream with Greek yogurt, I used half white sugar and half brown sugar, added 1/2 tsp cinnamon, and used room temp butter to cream with the sugars. I also used my kitchen aid mixer on low speed the whole time, and it's delicious. This is the only recipe I'll be using from now on!

Annemarie's Lemon Bars
This recipe isn't too shabby, but it can use a LOT of tweaking. To start off with, in an 8x8 pan, the amount of ingredients listed for the crust is way too much. I used just over half of what I made and it covered the pan very nicely and puffed up to a nice sized crust. Then there's the filling. The filling is okay as written, but definitely can be better. Bump up the servings to 24 or 30 and you'll have enough to be able to call this a bar. Then you want to also add the zest of one lemon to really get a true lemon flavor. The juice alone isn't good enough. And if you don't like it super sweet, cut down on the sugar. I gave it 3 stars only because it's a decent starting point.
