Mediterranean Chicken Salad

instead of bottled dressing I made my own. I buy sundried toms packed in oil and save the oil in the fridge. Just make a basic dressing using the oil with some nice vinegar and lots of oregano. It's great on this and many other salads

yummy but we don't have bisquits or jiffy cornbread mix here in France so, I just made some quick-cook polenta instead and upped the seasoning with more garlic and chillies.

Dreamy Nighttime Drink

Just started doing this but omitted the honey (chocolate chip cookie on the side) and use cardamom in addition to the cinnamon.Have been sleeping like a well fed baby. Of course, you can always add a splash of cognac or Armagnac for extra flavor

Instead of crescent rolls to line the bottom, I use quick cook polenta. Corn meal and water is the same Dunns River brand works well. topped with the other goodies, it's very yummy.

Dijon-Herb Pork Roast

My hubby loves currant jelly and uses it like a 5 year old with catsup so, this was a pleaser. changed a couple of things. Marinated pork in dry white wine first with herbes de provance and garlic. used dried parsley and some Herbes'd P since didn't have any fresh. the rosemary and thyme came from the garden. also, left out the corn starch and used creme fraiche to thicken sauce. Use what ya got

Marmalade Glazed Pork Roast

I do this but substitute jalapeño jelly and use balsamic vinegar instead of so much orange juice. It's a great base recipe with lots of room for personal taste tweeks. I also add carrots to the parsnips 'cause my hubby loves carrots

Old Fashioned Mac and Cheese

excellent comfort food. I don't have access to processed cheese so just used more of what is on hand. My tweak in order to make it like mom is to add crumbled fried southern style sausage. yummy. lots of fresh pepper on top. I actually use Toulouse sausage these days due to no JimmyD at the local supermarket.French twist on an American crowd pleaser

Baked Soy Lemon Chops

Good recipe, my tweak is to add a spoon of sugar , bit more lemon juice (lime works fine too) and lots of fresh grated ginger. The extra stuff balances the salt of the soy

Simplified Cassoulet

This is an excellent easy Cassoulet. Rather than spend the time prepping the duck breasts, I just bougt a jar of cofit d' canard at the local shop. One of the benefits of living in the duck capitol of the world (swear that what the sign up the road says) is that even the mini-marches have lovely duck products in tins and jars

I grew up with the sour cream variety. the cream cheese is pretty good but where I live in France, I use creme fraiche which is right there between the milk and camembert

wonderful for a crowd. I tweaked by adding frozen king prawns and a big dollop of cream fraiche to the sauce mix. Everyone loved it. The groom and my uncle (music) were still drooling 2 days later at the ceremony
