Pumpkin Black Bean Soup

Very healthy and tasty. I used chicken broth (didn't have beef broth) and omitted the ham. Also, I would use a little less onion next time.

Magic Mango Bread

I used half whole wheat and white whole wheat flour, reduced both the butter and oil to 1/4 cups and added applesauce and yogurt instead. I didn't have raisins or nuts to add. For a healthier version of this recipe, it turned out very good. Nice change from banana bread.

Golden Yam Brownies

Delicious! Everyone liked. I used whole wheat flour, added 1 tsp. cinnamon. I reduced the white and brown sugar amounts to 3/4 cup each in the mix, and found that plenty sweet. I also used 1/2 cup butter, and replaced the other 1/2 cup with applesauce.

Hoisin-Glazed Salmon

I held back a little on the chili garlic sauce so the kids would eat it, and addeD a few tablespoons of honey and brown sugar. Baked and then broiled at the end.

Mom's Zucchini Bread

Easy to modify: I use 1/2 whole wheat and 1/2 regular flour; Use 1/2 cup oil or butter and 1/2 applesauce to reduce fat. Add 1/4 cup nonfat sour cream to make it extra moist. Add 1/4 - 1/2 more zucchini. Everyone in the famil loves this bread. Can make with or without nuts.

Black Bean and Rice Enchiladas
