Pioneer Potato Candy

For years,we have been enjoying this candy but we call this candy "Fried Oysters". My mother-in-law is getting up in years and decided that this Christmas she wouldn't be making her candy. I questioned her about how to make it and then checked with "all" to compare. Its the same ingredients and is just as good if not better than what we've had for years. I've made this twice this Christmas. The second time I used my mixer to blend in the powdered sugar. It saved time & energy. After it was mixed, I put in the frig for 2 hours. Next, I used my small cookie scoop for even amounts and rolled into balls. I put these back into the frig so they would firm up. This made dipping much easier. I used 1 1/2 lb. of dipping chocolate, 22 oz. Spanish peanuts (chopped fine in my food processor). Makes approximately 5 1/2 dozen. Note: Don't salt the water when boiling the potatoes or your candy will be too salty.

Tiramisu Cheesecake

I served this for Christmas dinner and it was a big hit. The recipe did need more Kaluha as previously mentioned so I used 3 Tbs. in the crust, 6 Tbs. in the cheese mixture. I would use even more - next time I'll use 5 & 10. I used shortbread cookies instead of the lady fingers. Couldn't find the mascarpone cheese so I mixed together 8 oz. of cream cheese with 1/4 c. sour cream & 2 Tbs. heavy cream. The substitutions were necessary and worked just fine. I can't imagine the recipe getting any better. The cheesecake top didn't split but it did brown too much so I mixed up a simple chocolate ganache and poured over the cooled cake. Very attractive served with whipped cream, a dusting of cocoa a dash of cinnamon sitting in a puddle of Kaluha. TIP: For nice clean cuts you can cut your cheesecakes with dental floss. Push down and pull straight out, not up.

Awesome Slow Cooker Pot Roast

I was in search for a second meat to serve for Thanksgiving along with the traditional turkey. Something that was easy and tasty and everyone would enjoy. This recipe sounded right. Over the weekend I cut the recipe in half and did a trial run. The reviews were not overrated. It surely is an awesome pot roast. It was just as good 2 days later warmed up in the microwave as it was the day it was prepared. I think the relatives are going to enjoy it also!

All Day Versatile Sauce

Couldn't resist trying this recipe. However I found it to be less than I had anticipated from reading all of the rave reviews. I'll continue my search for that elusive sauce.
