Baked Oatmeal I
Not bad. We don't eat a lot of oatmeal in the house. This was definitely a good twist. We didn't have raisins on hand but we did have a bag of frozen strawberries that turned out to be delicious in the oatmeal. Will probably make again.

Basic Baked Spaghetti
This was excellent for our household. I ended up using mozzarella, italian, and feta cheese in the the spaghetti as well as cilantro, mushrooms, and some zucchini. Before I put it in the oven, I put one layer in the pan, covered with cheese, added the second layer and topped with the remainder of sauce and cheese. Over all this was a successful dish.

Stuffed Bell Peppers
I thought this recipe was really good. My household responded positively to it despite the fact there was no meat. I actually substituted the TVP with black beans and used brown rice. I also added different spices and hot sauces to make the end result a bit spicier. All in all, the meal was well received.
