Quick Black Beans and Rice

Very quick and very easy. I used diced, peeled canned tomatoes instead of stewed tomatoes because that's all I had on hand, still quite tasty, and very filling!

Elaine's Peanut Butter Cookies

Absolutely fantastic- I added a little bit more peanut butter, peanut butter chips and chocolate chips and they were by far the best cookies I've ever made! My family couldn't get enough of them! Be sure to bake them a bit longer for firmness. Enjoy!!!

Pumpkin Pie I

Angel's Old Fashioned Beef Stew

This stew turned out great- we added red wine in addition to the 3 cans of beef broth. Adding the potatoes in later as suggested by other reviewers was a great idea since it kept them from breaking down too early. There were plenty of leftovers and every bit of it got eaten. Thanks!

Fudgy Chocolate Fondue

This recipe turned out perfectly- I did use a little less butter and evaporated milk than the recipe called for. The chocolate had a fantastic consistency- not runny, not too thick. I served it to my 3 boys with strawberries, bananas, apples, and pound cake and it was a fantastic success! Make this chocolate- you won't be disappointed!

Ali's Amazing Bruschetta

Great recipe- however be sure to brush the bread with olive oil first- also I added minced garlic, salt and pepper to the tomato mixture for even more flavor. Very good on focaccia bread! Thanks Ali!

Banana Banana Bread

Good recipe but be sure to follow these tips: use very very ripe bananas! Also add vanilla, cinnamon, nutmeg, and additional brown sugar. This will supply the bread with the missing flavor. With these modifications I really like this recipe- it's very easy to make and definitely a keeper.

Manicotti Alla Romana

We LOVED this manicotti- all 8 of us wanted more! Some hints: we added merlot to spaghetti sauce and let simmer. Used fresh ground spices (basil, oregano, marjoram, italian parsley). Used a mix of ground beef and sicillian sausage, and a mix of ricotta and cottage cheese. You will LOVE this dish!!!

Grandma's Gingersnap Cookies

Oh my GOSH these cookies are good! You won't be disappointed with this recipe- I got crisp and chewy gingersnaps that were a huge hit with my family. I suggest baking them for a couple of minutes longer and also it helps to butter your hands lightly before handling the dough. Thanks Marie for this family favorite!!! :)

Southwestern Black Bean Stew

Great basic recipe that you can spring from: we added one can of white northern beans, chili powder, one small can of green chiles, oregano, cumin, and one can of diced tomatoes. We omitted the water since the canned stuff provided all the juice necessary. Cooked a pot of rice and mixed everything together into one fragrant stew. It was great and we ate it with tortilla chips- the whole family loved it! Thanks for the great recipe!

Honey Baked Chicken II

The only thing I did differently was to use boneless skinless chicken breasts instead of a whole chicken, cooked at 375 for 35 minutes. The rest of the recipe I followed to the letter and it was fantastic! THe whole house smelled so good while it was cooking. The curry was definitely not overpowering as some have suggested- I put the chicken on top of rice and poured the sauce all over it- I will most certainly make this dish again. Thanks for the great recipe!

Cha Cha's White Chicken Chili

Fantastic! Make sure to puree an additional can of beans to thicken up the mixture, and cut out one can of broth. I omitted the jalapenos and it still had a nice, delectable kick to it. Sauteed the chicken with the spices and garlic, onions, and chiles, then combined it with the bean mixture. Served with hot french bread on a cold rainy day- a big hit at my house!

Pretty good casserole! Make sure to add one can of milk or casserole comes out way too dry- but my family and I definitely enjoyed it and I will make it again!

Pasta Primavera with Italian Turkey Sausage

Great recipe! I didn't have sausage on hand so I used diced chicken breasts that I sauteed with the garlic and onion- then added red bell pepper strips and used a bag of frozen california blend veggies instead fresh sicne I was pressed for time. The family enjoyed it very much! The addition of the boullion cubes was right on- gave the flavor extra depth. I will be making this again, thanks!

Cabbage Beef Soup

Excellent- I was so happy with the way this turned out! I used 2 cans of tomato sauce, one can of diced tomatoes, 2 cans of beans (non-drained) and one additional can of beans (drained). Don't add the water- let the liquid from the beans and the tomatoes be the broth! I cooked this on the stove in a big pot in about an hour and a half- no problems. Also- wait to add the cabbage until you're about halfway done, and definitely add about a full head of cabbage. This was great and we will be enjoying this again- thanks!
