Jo Jo's Favorite Banana Muffins

I used brown sugar instead of white and halved it (1 cup would have made them sickly sweet in my opinion). I also added a teaspoon of ground ginger and some toasted almonds. Mine took about 23 mins @ 350 and came out light and airy. Very yummy.

Strawberry Oatmeal Breakfast Smoothie

The sugar is very unnecessary as the strawberries are quite sweet. I like to add vanilla too.

Northern Thai Curry with Chicken and Peanuts

Delicious. I used ground chicken instead and basically mashed up the meat with the spice paste. I also added a spoon full of peanut butter because I didn't have quite enough peanuts on hand. It was an absolute success. Very delicious.

Tomatillo Salsa Verde

Delicious! Very easy and yummy. I used my immersion blender to smooth it out. If it's too watery, you need to simmer it longer- that's all there is to it! Try scrambling some into your eggs- it's a real treat!

Fijian Dhal Soup

This recipe turned out beautifully. I actually made mine in my slow cooker, so apart from sauteing the onions and garlic, I basically just dumped everything in, set it on high and about 4 hours later it was done. I like my food on the spicier side than most so I still needed to add hot sauce to my finished soup. If I make it again I will add more chili flakes or cayenne.

Apple Squares

I've made these a couple times now and I'm a big fan. I put in twice as many apples and about half as much sugar and they turn out wonderfully. A little more cake-y than square-y but there's nothing wrong with that. Great for get-togethers or to cut a freeze and bring as a snack in your school or work lunch.
