Sarah's Banana Bread Muffins

Reviewed: Jun. 20, 2009
Cut sugar to 1/4 cup brown sugar and 1/4 cup granulated white sugar. Cut fat to 2T. and replace remainder with applesauce. A teaspoon of vanilla punches up the fruity flavors. I don't add coconut, just a personal thing.

Prosciutto Wrapped Asparagus

Reviewed: Sep. 25, 2008
I peel and blanch the stalks... do the ice bath etc.. one thing I do differently is use a good soft goat cheese. I use only enough proscuitto to wrap the stalk with one layer. Spray with olive oil and run it under the broiler to crisp and shrink the meat to the stalk. I serve them room temp as appitezers and warmer if they accompany a meal.

Zucchini Bread IV

Reviewed: Jul. 31, 2008
I made this recipe with 1/2 cup of oil and 1/2 cup of applesauce to reduce the oiliness. The crumb topping is good. I think it made too much as I only used half of it, and I used an additional tablespoon of butter so that it would hold a crumb texture. My friend Dave said that he likes it with mini chocolate chips, so I added that to my loaves as well. I also toasted the walnuts before adding them to the batter.

Lemon Bars I

Reviewed: Apr. 23, 2008
These had a wonderful lemon taste, not too tart, not too sweet. We will mark this recipe as a "keeper". Thanks for a great recipe.

This is a great recipe. I am very glad to see one that has a basic sauce and no grape jelly.

Chicken Broth in a Slow Cooker

Reviewed: Jan. 30, 2008
I saw a great tip on Sara's Secrets. When making chicken wings, save the wing tips in a baggie. When you go to make stock use them as well. All that bone adds gelatin to the stock and makes it full and rich.

Julia's Best Ever Chocolate Chip Cookies In A Jar

Reviewed: Dec. 6, 2007
I think the author of the recipe may have meant to add one whole egg, and one egg yolk. I have a chewey cookie recipe that calls for just that. If you want a softer cookie use all brown sugar. I hope this helps! Happy baking everyone! Rebecca

Banana Bread V

Reviewed: Nov. 27, 2007
Very nice recipe. I also added the cinnamon and vanilla and extra egg. I also added 1/4 teaspoon of ground allspice, just a personal preference. I remembered at the last minute that I didn't have any walnuts. So I chopped up about 20 roasted macadamia nuts that I did have on hand. They aren't bad, they gave it the crunch it needs and are definitely not the traditional taste, but they worked. My family seemed to like it as well. This recipe rose beautifully. I baked mine in 4 mini loaf pans so I can give a few away. Thanks for the great recipe.

Deep-Dish Pumpkin Pie

Reviewed: Nov. 24, 2007
I made this recipe for Thanksgiving. The crust stuck like crazy!! I mean like I practically had to chizel it out of my glass pan, so Definitely use nonstick if you make this recipe. I thought with a cup of butter in the crust that it for sure wouldn't stick... wrong! I would also have prefered it not be so deep, mine was about 2 1/2 inches deep. It would be better at a max of1 1/2 inches I think. This recipe came together fast, so that was in it's favor. I also toasted the nuts before I chopped them and added them to the crust mixture. All in all not bad, but not a repeat for me. Happy cooking everyone!

Cajun Spicy Potato Wedges

Reviewed: Oct. 4, 2007
I have a question about the egg whites used in this recipe. Are they beaten until just mixed or thoroughly until they have incorporated air? Please clarify, as these sound really good and I am looking forward to making this recipe. Thanks, Rebecca

Michael's Foccacia Bread

Reviewed: Oct. 4, 2007
This is a great recipe. I changed 2 things. First was I used 2 1/2 cups of a.p. flour and semolina for the remainder. It seemed to me that raw onion may come out a little strong for my family's taste buds so I sauteed them first. I drained them and cooled them prior to adding to the recipe. Everyone thought this one of the best recipes they have tasted in a long time.
