About this Cook
I was born in Los Angeles CA, but grew up in Riverside, I am half puerto rican and come from a big hispanic family. I joined the Navy at 19 and lived in Japan for 3 years and traveled all over the world and have experienced the most amazing things, especially the food! I have always loved food and cooking, I learned from the best my grandmother and my mom.
My favorite things to cook
From my time in Japan, Thialand, Phillipines, Korea, Spain and Puerto Rico, I always paid attention to the local Cuisine. So many technics I picked up it was amazing, I was in the countries where these foods were prepared 100 percent authentic, I couldn't ask for better than that!
My favorite family cooking traditions
Alot of the cooking I do is from my grandmother and mom, very traditional puerto rican dishes. One of my favorites was always pan fried Plantanos with a garlic herb mash and lightly breaded pan fried Scallops.
My cooking triumphs
I can a make a very "mean" homemade salsa!

Best Spanish Rice
Good spanish rice, BUT...I am Puerto Rican and the secret is Cilantro, fresh minced cilantro...cut up about a 1/3 cup and fold it in about a couple of minutes before serving it and it will be perfect!

Indian Chicken Curry I
I made this 2 days ago, very tasty. I made some Jasmine rice to go with this, I actually used 8 chicken thighs (skins removed) and boiled them for 30 minutes in an olive oil and smoked salt brine, then pan seared them, I did use twice the amount of curry powder and reduced the tomatoes, but I liked the creaminess that the Coconut brought to the rue. I also added some Anise and fresh cilantro, really made the dish stand out, as far as a "true" curry dish, that could be a matter of taste and opinion, Indian dishes traditionally are very complex in the uses of spices. All in all, still a good crowd pleaser for comfort food!
