World's Easiest Bread Machine Pizza Dough

This is an AMAZING basic pizza crust. It's adaptable, you can add or remove the seasonings you prefer or ran out of. I add more garlic, sometimes a bit of parmesan. It's soooo good and in a pinch you CAN make it by hand. I do tend to prebake my crusts for about 5 minutes depending on how heavy the toppings and how thick the crust is going to be. I've tried a lot of crusts and I think what I like about this one is that the ratio of seasonings is a good starting place to personalize it more to your preferences.

Pecan Cups

I made these at the last minute for a friend who wanted a pecan pie without the whole pie. These were PERFECT! The first time I made them I followed the recipe to the letter and they turned out beautifully. The second time I I used the rest of the cream cheese (probably 5oz) ooops! and guess what? They still turned out FANTASTIC!!! I used a regular sized 12 cupcake pan. I also used liners. I didn't care how they looked, but I am getting better at making them consistent and neater. However- it doesn't matter. They are so delicious! Plus- they peel out of the liners beautifully. I think I will eventually get a little mini pan. But really these go together so beautifully. Make sure your butter is room temperature and it makes the crust easier to put together. These are definitely on my list as a keeper. I highly recommend these. In my attempt to make them look neater and more consistent (which would help if I had the smaller mini muffin pan) I did read on other similar recipes to combine the dough and then refridgerate it- then- form into a 4" square and cut into 1" pieces- obviously a mini muffin pan would be 16 squares. I just used a cookie scoop. Most of all- I just highly recommend this recipe. It's a dessert. It's meant to be a treat.

Mom's Zucchini Bread

This recipe has great potential. The batter tastes great.(bowl licker) I've made zucchini bread before, I'm not a baking newbie. I followed this recipe exactly and it's still in the oven at 90 minutes. My gas stove is barely 6 months old so I can't imagine that is the issue. I'm using the disposable aluminum loaf pans. I wonder if this is the issue for prolonging the baking? About an hour in- and it's just now starting to smell like it's baking and finally rising above the loaf pan. I finally upped it to 350° and hopefully it will finish cooking. I have no qualms with the recipe- it's how long and what temp and if in fact baking it in the pan I'm using is a factor.

Apple Cinnamon White Cake

This is a great white cake recipe and I can see it being very versatile. I have however made it a handful of times and have always had to bake it closer to 60 minutes instead of the 40 mins the recipe states. At first I thought it was a fluke- but I've made this in 3 different ovens, two electric, one gas. I've also used an oven thermometer to check my temperature. But other than that- it's a FABULOUS delicious recipe. It's great to use up that last sad looking apple in the crisper. lol

Hasty Chocolate Pudding

This really is a fast easy chocolate pudding. I think next time I will try adding salt and butter like other reviewers have stated. It's thick and rich but the flavor falls a hair bit flat, I think the butter and salt will pop the flavor just that extra bit. I used a large microwave dish and didn't have any issues with it boiling over.I will definitely be making again.

Easy Microwave Chocolate Cake

I read the reviews and added the extra 1/2 cup sugar and extra Tbsp of cocoa and it HIT THE SPOT!!! I am definitely adding this to my recipe book! I used an older shallow CorningWare dish... it was perfect- I even covered it with plastic wrap and it turned out Perfect!!! Excellent recipe.

Chicken Cordon Bleu I

Bigger chicken breasts definately work better. I really wanted to make this verbatim but didn't want to go to the store. I had breast filets, low fat cream cheese and cubed ham... Took a little more tweaking, but I pulled it off. I added a sprinkle of shredded cheddar to the cream cheese. (probably a big tablespoon worth of cheesy mixture to each chicken slice rolled with ham cubes in the middle. Then I pounded my chickens thinner. Otherwise I followed the recipe and did the salt and pepper thing, and bread crumbs. The sauce the first review listed was AWESOME!!! I can't wait to get normal sized chicken and try this recipe.

Claire's Yummy Crepes

Overall consistency of recipe was good- easy enough to make- no hassle, just a little too 'flour-y' for me. I like a richer egg-y tasting crepe. But it's all preference- and really after you pile on the fruit and yummies it's ALL good!

Peanut Butter Cookies VII

These cookies are the best! So light and airy and the taste is just perfectly peanut butter- not overwhelmingly peanut butter. I give this recipe a 5 stars! Definately a must! I assume it's because it just uses white sugar and not brown like most PB cookies recipes. But it works. So light it melts in your mouth. The cookies are very fragile- but so good!
