Overnight Blueberry French Toast

Reviewed: Sep. 1, 2013
This was pretty good with some of the modifications other reviewers suggested. I halved this recipe, but kept the blueberries the same. I used most of a block of light cream cheese, but instead of cubing it, I mixed it with a couple of tablespoons of confectioner's sugar and some almond milk - just enough to thin it out a bit. (I mixed until the consistency looked kind of like large-curd cottage cheese, and it spread over the bread layer just fine.) However, I think the recipe would have been better with even less cream cheese and more fruit. I used about half a loaf (6 oz) of bakery ciabatta bread that I had dried briefly in the oven. It was pretty good but the top layer of bread did not soak up enough of the egg mixture overnight -- and as a result the top layer of bread was pretty dry. I skipped the sauce -- because I was feeling lazy -- but next time I will definitely make the sauce and I think it will help with the dry bread problem.
