Black Magic Cake

This is the tastiest and easiest chocolate cake I've ever made! I made cupcakes and they turned out perfectly. SO moist and fluffy. I recommend using a measuring cup with a spout to pour the batter into the cupcake pans.

Baked Green Tomatoes

After reading other reviews, I added quite a bit more spice (cayenne, lots of seasoned salt, pepper, garlic and onion powders)to the cornmeal. I also cut the tomatoes very thin and dipped them in egg before the cornmeal. I sprayed the cookie sheet and the tops of the tomatoes with Pam before baking and flipped them once during cooking. They came out very flavorful and crisp. I actually fried some of the ones I made to compare and the baked ones are better! They are crisper and way less greasy tasting.

Spanish Rice II

This is so much tastier than any box mix! I left out the salt, added 1/2 tsp. of cumin, 2 tbspn. cilantro, 2 cloves of garlic, and a can of black beans. I also subbed chicken stock for water.

Healthy Banana Cookies

Tasty and a cookie I can feel good about eating! I used only 1/4 cup of oil and upped the oats to 3 cups. I also added 1/2 tsp of nutmeg and 1 tsp cinnamon. I also added a pinch of salt to bring out the natural sweetness of the bananas. This cookie is not overly sweet. The combos of fruits, nuts, chocolate, etc. add-ins are limitless. I'm going to make these for my diabetic mother-in-law for mother's day.

Apple Banana Cupcakes

Yum! I also substituted vegetable oil for shortening. I added 3 bananas total and topped with chopped pecans and brown sugar. I chopped the apples rather than shredding and an apple flavor definitely comes through because of it. With this mixture these were definitely more of a muffin texture.

Jam Muffins

Popcorn Cake II

This is very easy and very tasty! I mixed in honey roasted peanuts and semi-sweet chocolate chips. I also pressed the mix into a 9x13 pan instead of bundt so I could cut squares.

Brooke's Best Bombshell Brownies

These brownies are so yummy! Chewy near the outside and super moist in the center. I made them for my sister-in-law's birthday. She loves peanut butter so I made a few changes: I used 1/2 cup semi-sweet choc. chips, 1/2 cup peanut butter chips. I poured in half the batter, added several dollaps of chilled peanut butter, then covered with remaining batter.

Homemade Black Bean Veggie Burgers

These are so good! My husband loves burgers and he didn't miss the meat at all. I added 2 eggs as another review suggested and a bit more bread crumbs to get the right consistency. They held together very well and were moist and delicious!

Glazed Meatloaf II

This is definitely a VERY tasty recipe! I used lean ground turkey instead of beef and it still came out very moist. My husband is allergic to onions so I used onion powder instead of fresh onions and it worked well. I also added salt and pepper to the meat mixture. I will double the glaze next time b/c it is so good!

Amazing Chicken

I really like this recipe. It is very easy to change to suit your tastes. I used bacon caesar dressing instead of mayo, and regular Italian seasoned bread crumbs. The chicken was juicy and the bread crumbs were slightly crispy, not soggy. I cut the breasts in half and it took 30 min. to cook.

Broccoli, Rice, Cheese, and Chicken Casserole

This recipe was ok, but wasn't great. I used stewed chicken rather than canned chicken, and I left out the onions. It's fairly gooey. It would probably have been better served with a bread of some sort. A little lacking in flavor. Could be tasty with some experimentation.

Grandma's Secret Pie Crust

This was the first time I'd ever made a homemade pie shell. This recipe made it so easy. It was very easy to work with and came out flaky and very tasty. I don't think I can ever use a store-bought pie shell again. I will most definitely use this recipe again!

Blueberry Pie
