Slow-Cooked Parmesan Chicken

Reviewed: Nov. 9, 2014
This is a great recipe, but the rice does come out pretty mushy. I like to double the recipe and serve it over pasta the first night and rice the second night. I always add a little more parmesan than called for, a sprinkling of garlic powder and a bit of basil to spice it up a little. It's a tasty recipe that requires very little time in the kitchen and I LOVE that. Thanks!

Slow Cooker Chicken Taco Soup

This is just so, so GOOD! I don't add the beer, but otherwise stick to the recipe as written and it is awesome! Mine always comes out more like chili than soup.

Pork and Potatoes

Reviewed: Apr. 19, 2013
The first time I made this it took FOREVER to get the potatoes done and I'm way too lazy to do the pre-cook thing, but I read one of the reviews that said to use a baking bag and that was the answer! Hey, you do it with a roast and they come out done, right? It works with this too. I did add onions and some basic seasonings. Easy and everybody loved it!

Pork Chops in Red Sauce

Reviewed: Jan. 15, 2013
I posted a comment a while back stating that I was going to try this in the crock pot. I did and it worked fine. I did double the sauce and used boneless chops. Also added the extra spices. Let it cook on low for about 8 hours and then served it over rice. Not as quick, but you can skip the pan frying this way and if you've worked all day... it's nice to come home and have dinner just about done.

Ham and Cheesy Potato Dinner

Reviewed: Nov. 18, 2012
This is a super easy one and everybody loves it. I change up the soups and cheeses from time to time, just for something different. My son likes it best with Swiss.

Pineapple Cobbler

Reviewed: Oct. 29, 2012
I just took mine out of the oven and let my son be the guinea pig. Passed with flying colors! I did cut back the butter to 6 tbs instead of the 8 in a 1/2 cup and dropped the sugar down to 3/4 cup. I also took the suggestions of adding the tsp of vanilla and cinnamon to the batter. It does look runny before it's baked, but the cake bakes up around the fruit and it comes out all sticky and gooey like a cobbler should. I'll bet you could use this batter with any sort of pie filling and make any type you wanted to. Thanks for sharing this. It'll be used a lot. :)

Mini Meatloaves

Reviewed: Jul. 2, 2012
My family loves this recipe. I've made it with the cheddar and also with mozzarella. Both are excellent. I usually just make one big loaf instead of multiple small ones. It's moist and it doesn't fall apart!

Best Oven Baked French Toast

Reviewed: Jun. 9, 2012
My family loved this and is already begging for a repeat. I spread a very thin layer of cinnamon applesauce between the bread layers and then sprinkled a little extra cinnamon on top. When you serve it, flip it over and you have a nice brown sugar/cinnamon topping! It's EASY and really, really good!

JK's Sausage Casserole

Reviewed: May 21, 2012
I followed everyone else's advice and added the seasoning salt, garlic, pepper and parsley. Good advice! I think without that, it would've been really bland. I used seasoned croutons instead of bread and because I have hungry boys to feed, I increased the eggs to 12. I didn't add any milk because I saw others say that theirs came out runny. Mine was perfect! Threw a little extra grated cheddar on top and they wolfed it down! Even my picky eater loved it! Oh... One more thing... cook your onions with the sausage, unless you like them a little crunchy.
