Terry's Texas Pinto Beans
I thought it was a little weird to eat beans in the water that they had been boiled/softened in, because I usually drain and rinse mine a couple of times when starting from dry. So I used my previously boiled and rinsed pinto beans for this recipe, doubled the chicken broth, and used a can of Mexican style tomatoes with chilis, boiling the whole for 45 minutes since my beans were already cooked. We ate this over rice, sprinkled some shredded cheddar on top and loooooved it!!!! I'll be making this again.

Butternut Squash Pizzas with Rosemary
I was trying to find something to do with my butternut squash that was NOT soup and this was a great alternative! I felt like such a foodie because of how sophisticated it tasted. I took the recommendations of several reviewers and roasted the onions and squash with balsamic vinegar, and used mozzarella cheese with a sprinkling of parmesan because I didn't have enough. I used fresh rosemary, and on one of the pizzas added sun dried tomatoes but that taste was overpowering, so I wont do that again. I only gave it 4 stars because it could have used some garlic, and on some bites it was a little bland. We found that a little Alfredo dipping sauce did the job. We'll definitely be making this again!!!

Spicy Sweet Potato Soup
WOW. This soup was delicious! and we don't normally like sweet potatoes! Per several reviews I made some adjustments to the original recipe: 1) I used 3 medium sized sweet potatoes, 2) substituted 1 cup of chicken broth for 1 can of coconut milk, 3) increased cumin to 1 1/2 tsp, 4) added 1 1/2 tsp red curry paste and omitted the red pepper flakes, 5) subbed fresh ginger for 1 tsp powdered as that's all I had. I didn't have any cilantro either, but I can see how it would taste very good! You can really taste the lime, and next time I might just use half. The fresh tomato is awesome, as well as the lime zest sour cream. Definitely making this again.
