Beef Pho

OMG crazy awesome! The whole family swarmed my kitchen for seconds, including my picky 9 yr old son but there was not enough broth. There's only 2 things I will change next time, triple the spices & double the broth so we can have more. Will definately make again!

Boston Baked Beans

Wanted a from-scratch recipe like grandma's. This did it. Yummy! Yes it takes some time, as do all dry bean recipes. Very flavorful. Again...yummy!

Bunkhouse Beans

Everybody in my family licked their plates clean & I have some picky eaters! I didn't have chili beans so I used a can of black beans instead & used green salsa because we like the flavor better than red. It was awesome. For those who aren't that into "spicy" food, top it off with a little dab of sour cream. Yummy! :D

Quinoa Tuna Casserole

Since I have very high cholesterol & can't have either noodles or white rice, this is a great alternative. Added a little chopped fresh basil at the end for some fresh herbage & was awesome. Thanks so much for giving me one of my fave dishes back!

Eggs Benedict

omg this is SO good! Didn't have any english muffins so used Orowheat thin sliced sandwich bread toasted. The sauce is spot on, just be sure to watch it so it doesn't "split". The taste is awesome! Will definately make again.

Dale's Swedish Meatballs

Was a very good recipe. I love the Banquet frozen dinner swedish meatballs and have been looking for years for a recipe that tastes close...this one does. The meatballs are really tender and the sauce is great. The only problem I had is the amount of sauce. We like ours with enough to pour over the noodles too & even though I doubled the sauce part of the recipe there was hardly any left after the simmering. I'm going to try canning the sauce and freezing some meatballs separately then I can heat the balls up in the sauce when I cook it & there might be more left over. Overall a very good recipe & will definately be making it many times more! :)

Mom's Dill Potato Salad

One of our family's favorite potato salads. I add about 1 c. whole milk to the dressing to loosen it up a little & make it easier to go all over the potatoes. Yummy yummy and so easy too!

Chef John's Italian Meatballs

Thiswas awesome! Thanks so much Chef John, a big hit with my family. The only thing I did different was in the cooking process. After baking them through, I added them to my sauce for about 30 min. so they could moisten up even more and soak up the marinara flavor. Yummo!
