Tuna Melt Sandwiches

Reviewed: May 11, 2008
I added another can of tuna - I couldn't figure out how one can was supposed to make 6 sandwiches. Glad I did! I used rolls instead of hamburger buns and they tasted great! I also heeded the advice of another user and increased cooking time by 8 mins and cheese was fully melted. Family raved - thanks!

Nice flavor combinations. I also added green olives - my daughter gobbled it up! Thanks for a simple keeper for busy weeknights!

Spinach Tortellini Soup

Reviewed: Nov. 22, 2009
Great recipe, new family favorite! I sauteed chopped onion, garlic, and shredded carrot together beore adding broth (used 1 can reduced sodium and one can regular), used fresh spinach, practically eliminated the garlic powder, and topped with a few sprinkles of grated parmesan. Fantastic!! Thank you!

Cinnamon Sugar Cookies

Reviewed: Oct. 29, 2003
I am sitting here munching these cookies as I type this! :) They are wonderful! I did *not* add extra flour either, and the dough is very, *very* soft--flour your hands before you try to roll the dough. And don't underestimate 1/4 inch--my cookies were too thin and flat-but totally my fault! Great recipe!

Apple Strudel Muffins

Reviewed: Nov. 30, 2009
I love these muffins because the top is super sweet, but not the muffin itself. I used 1.5 cups of apple shredded, 1 cup chopped, added 1/2 tsp. each cinnamon and nutemeg to batter, and used 1/2 C brown sugar and 1/2 C white. Add sugar to apple mixture and let it set while you prepare topping - the juiced apples make for even more moist muffins! Note: additions make 16 muffins total. Yay for great recipes!

Cranberry Streusel Pie

Reviewed: Dec. 13, 2009
Beautiful pie! I was chasing cranberries all over my kitchen, though. If chopping, use a blender or food processor. They don't make knives big enough for whole cranberries, those little roll everywhere! :)

Lime Chicken Soft Tacos

Reviewed: Apr. 16, 2008
This recipe is tasty and easy to tweak for personal preference. I added oil to pan so chicken didn't stick, omitted the oregano, added 1 tsp. fresh chopped cilantro, an extra clove of garlic, used 1 whole lime, and reduced cooking time by 10 mins. I also didn't have green onions so I used 1/4 cup chopped white onion. I don't think marinating the chicken for additional time is necessary since the chicken absorbs the strong flavors of garlic and lime so easily. Thanks for a keeper!

Brown Sugar Chops

Reviewed: Jul. 31, 2005
This is a wonderful, easy recipe to prepare. I dislike pork, however, I LOVED this dish. I used very thick porkchops, so perhaps that is the reason that mine were not bland, however, the cooking time needed to be increased SIGNIFICANTLY. next time I am trying with onions. Also, my chops never really "browned" the way I'd have hoped, others said theirs glazed or were too dark--did not have that problem, either. Chops were gorgeous, flavorful and still moist. Made with Garlic Corn on the Cob (recipe from same site) and french bread. Drain the drippings left in pan, drain off some of the fat, mix (or add flour if desired) and add to tops of chops. FANTASTIC! FAMILY RAVED! Thanks for a keeper! *-V.

Cheesy Chicken and Rice Casserole

Reviewed: Aug. 14, 2004
I have made this several times, once as the recipe says and then once with a few additions. I also added an extra can of chicken broth--and used more bread for the top (the best part!). Fantastic recipe, thanks for a keeper!

Applesauce Bread I

Reviewed: Oct. 3, 2011
I needed to use up a ton of applesauce and made this bread not expecting much, but boy was I wrong! I reduced oil by half and added nutmeg and additional cinnamon, the bread was moist and flavorful. Not very sweet, so it wasn't liked as much by the kids, but what do they know! ;) thank you!

Absolutely outstanding! I added: 1 more potato, 4 stalks celery sliced thin, cumin, garlic sea salt, black pepper and cilantro to meatballs, used 2 XL beef bouillon cubes, and garnished with cilantro and a squeeze of lime. 5 stars all the way!

Sopapillas

Easy enough! Don't under/overestimate your 1/4" - results not good. By the 3rd round in the pan, we had them puffing nicely! As another user noted, temperature of oil is very necessary for success. Good recipe, try eating warm with Hershey's Chocolate Syrup, yum!!

Cheesy Chicken and Potato Casserole

I'm giving this recipe only 4 stars because it does need the additions mentioned by other reviewers (onions, cream of mush. soup), but my boyfriend devoured it and the leftovers. Very tasty and no mess! Thanks for a keeper!

Garlic Corn on the Cob

Reviewed: Jul. 31, 2005
Only 4 stars because fresh garlic was SO MUCH BETTER! I'd say don't even bother with the powdered stuff. Also, my corn needed a bit more time in the oven (almost the full amount), though I was only making 5 ears. No matter, it was fantastic and simple! Yum yum, thanks! *-V.
