Carrot Cake III
I absolutely loved this cake. I hate baking because nothing I've ever baked before has tasted good. This cake was just amazing. I must say next time I make it, I will use brown sugar and less pecans as it was a bit too nutty for my taste. I will also be making half the frosting as it was way too much the first time (I like thin layers of frosting, only). I think I will also add a bit of nutmeg. You may think it's too many alterations but honestly, the way the recipe is written is excellent. I'm just trying to go a bit wild with my first delicious baking experience!
