Alyson's Broccoli Salad

This was AWESOME! Used 1 head fresh broccoli, boiled 1 min then rinsed in cold water. Let salad sit overnight leaving out 1/2 of bacon and sunflower seeds till ready to server. I did sunstitute halved grapes instead of raisens - other than that followed to a tee and it was delicious!!!

Alaska Salmon Bake with Pecan Crunch Coating

I made this exactly as listed except I spread the honey mustard sauce on top of fish and let it sit (covered) in fridge for an hour or more because I was having a guest and wanted everything done ahead of time. When I was ready I spread the crumb mixture on top and baked like instructed. THIS FISH WAS DELICIOUS!!! I DEFINITELY will make this again and not change a thing! NOTE: remove skin from salmon before cooking! You can see a demo on UTube video.

Chicken Enchiladas II

I will make these again! Like the others I made more sauce, mixed some salsa in with the sauce that went over the top and added a little chili powder for extra zip. I used white corn tortillas (spray a pan then heat a few seconds on either side to soften so they roll up easy). I think this really made them yummy. White corn tortillas are small - like if you unfolded a taco, maybe others had problems with too little filling because they used a larger size? I made double the filling but wont next time because I ended up with a dozen of them. They were just as good the second day though!

Mexican Baked Fish

Do not make this unless you LOVE fish! My husband LIKES fish but HATED this dish. I admit I had to agree with his dislike so we ended up not even eating it. I made it per the directions and everything seemed fine but the taste was like fishy salsa with cheese. Just not a combination we want to experience again.
