Roasted Garlic Cauliflower
Unlike other reviewers I did not cover the pan as I was going for a more roasted vs steamed texture, but I did use a high sided ceramic casserole dish and I think this helped it somewhat from burning. My only change from the recipe was that I used about one cup of freshly grated parmesan, I had only dried parsley so I used about two tablespoons of this, and I added about half a teaspoon of Tony Chachere's instead of the regular salt to give it a little spice. It was fantastic! Even my kids ate it. I had prepped it for my husband to put in the oven, and when I came back home I could not believe how good it smelled, too. No stinky steamed cauliflower smell here! Super easy and my new favorite recipe for cauliflower.

Spicy Refrigerator Dill Pickles
These are the best fridge pickles I have ever made. Just spicy enough with a touch of sweet at the end. I think using fresh, good garlic is key. I followed this recipe exactly and could not be happier with the result. All of my family and friends are asking for these pickles now!

Turkey Veggie Meatloaf Cups
I, too, used a food processor to finely chop, but not puree, the veggies. I then strained them in a mesh strainer for about 2 minutes to get rid of some of the extra liquid, as they were a bit mushy the first time. Adding some seasoning salt and pepper also helped give it a little more flavor. And now my kids are eating these as if they were the best thing they have ever tasted. Thanks for such a great recipe!
