Key Lime Pie IX

It really is restaurant quality! I've been wanting a real key lime pie for ages and this was perfect! Juicing the individual limes was a pain, next time I'll just buy the bottle of key lime juice!

Sugar Cookie Icing

I love this recipe! It does thicken as it sits, so don't make it too thick to begin. I like to make it plain with vanilla instead of the almond, or if I make it with almond then I substitute honey for corn syrup.

Scrambled Egg Muffins

These are perfect for bringing to a brunch! They're easy to make, easy to transport, and so easy to eat! You can mix up the veggies and cheese for variation and even friends who "don't like eggs" liked them!

Five Minute Ice Cream

AMAZING! I've made this with frozen packaged fruit and fresh fruit I froze myself. I've also substituted half-and-half or whole milk for the cream. Any way you make it - it's unbeliveably good! Just make sure if you freeze the fruit yourself you dice it, or you'll overtax your blender!

Oven Baked Jambalaya

Takes awhile to make, and awhile to cook, but it tastes great and even our two toddlers loved it! Unless you have a family of 12 you may want to make this for company, half the recipe for a regular night, or freeze half after making. We froze half and it tasted great when we took it back out and reheated it!

Peanut Butter Chews

I use Rice Krispies to make these easier to work with, always remove from heat *after* stirring in the PB, and skip the drizzle! If I'm making them for home I press the recipe into a 9x13 pan and then cut into bars, but for a large group I make them into balls for ease of serving and clean up! (to make balls, scoop onto wax paper lined cookie sheets quickly, then go back and roll each "pile" into a nice ball!)

Easter Surprise Cupcakes

These were fun to make with the kids. We decorated the cupcakes to look like "baskets" using licorice sticks for handles, green coconut for grass, and mini peanut butter eggs!

Cake Balls

I love how versatile these are! And they are *so* good....they don't taste anything like regular cake and frosting, more like a bon-bon! Once mixed I can't tell whether the cake and frosting were "commercial" or homemade, but I *can* tell if the shell is "chocolate coating" instead of real chocolate. I substitute 2 cups Toll house chips melted with 1 Tbls shortening for the coating. It doesn't take any longer to heat up and tastes *so* much better! My favorite is "german chocolate" (dark chocolate cake with caramel coconut frosting and chocolate shell), but my kids love "PBJ" (strawberry cake with vanilla frosting and peanut butter chip shell).

Dirt Cups

This is a fast, fun recipe that tastes great! It's perfect for kids parties. I've been making it for 12 years now and I never make it in individual servings. I make the whole thing in a clean flower pot and garnish with gummi worms, gummi bugs, and/or fake flowers. Adding a clean spade to serve gives it the perfect something extra!

Soda Pop Ice Cream

Ice cream made with snow never tastes like traditional ice cream...but this was something else entirely. It was a really odd flavor. We tried again with apple juice and that was eaten right up!

Microwave Peanut Brittle

Very yummy! I would definately recommend making this in a 4 cup glass measuring cup to control where you're pouring the hot mixture! I prefer it with sea salted cashews!

Fairy Bread

This is a great recipe for young kids to help with! I cut whole wheat bread into stars, spread with tub margarine, and sprinkled with colored "shots". My 1yr old licked the candy off, my 3yr old ate his stars in record time, and I took a few bites, but wasn't all that impressed. Next time I'll try toasting the bread.
