Microwave Pralines

This was really delicious and decadent. The only reason I give it 4 stars rather than 5 is that I did use the helpful comments of other reviewers. Specifically, I mixed all ingredients together at the beginning and then microwaved for 9 min. Checked for soft ball stage every minute or two after that by putting a drop into cold water. Also, I didn't have corn syrup so used 2 Tbsp pancake syrup which the ingredient list indicated was basically corn syrup with flavorings. Added a pinch of creme of tartar as recommended below. Anyway, with these changes, it was very easy and came out great.

Coconut Curry Tofu

I really like this recipe, but modified it a fair amount. Didn't have any curry powder so used 1 tsp garlic, ½ tsp coriander and ½ tsp cumin. Left out the tomatoes. Used frozen cut green beans instead of the bok choy. Came out great.

Downeast Maine Pumpkin Bread

Excellent as is - moist and yummy. However, I've recently been experimenting with a fat substitute called Z-trim. I tried replacing half of the oil with Z-trim and the result was just as good.

Grandma's Lemon Meringue Pie

This was great! One addition - I made the filling in a glass bowl in the microwave instead of on the stove. It worked just fine. Just heat on high and stir every couple minutes.
