Best Strawberry Daiquiri

These were really good and went down so easily! I didn't follow the measurements exactly, but it was probably close. I used Coconut Rum instead of regular and oh my goodness! I highly recommend you try it that way. It was the perfect amount of sweetness for me, without adding any sugar. Will definitely make them again.

African Chicken Stew

I wish there were a 1/2 star option, because 3 seems too low and 4 too high. This was good. Like other reviewers, I just found it bland. I used chicken broth instead of water, added more salt than called for, added carrots, cayenne pepper, even a little brown sugar towards the end b/c it was so lacking. But still it wasn't enough. It was good. It wasn't great and it seemed like it should have been. I can't put my finger on what was missing. I probably won't make again.

Easy Curried Cauliflower

Easy AND delicious! I would definitely make this again. I used olive oil instead of vegetable (healthier). I also replaced the kidney beans with chick peas, which seems like it "goes" better together. I made a double batch and similar to others, found it fairly dry at the end. So I added half a can of coconut milk. Perfect.

Chicken Tikka Masala

I would have given this 3 1/2 stars. But everyone else seemed to like it more than I did. My chicken turned out kind of mushy. I marinated it overnight instead of just the one hour and I have a feeling that had something to do with it. I only added a pinch of salt to the marinade and that was it. Didn't miss it in the least. I used coconut milk instead of heavy cream. The taste was fine, but it never seemed to thicken. I added some plain yogurt to help things along a bit. But it still never quite got thick enough for my taste. All in all, I was a tad disappointed considering all of the rave reviews. But again, the company seemed to really enjoy it.

Cuban Ropa Vieja

This was good and will probably be great the next time I make it. I made some changes. I used a roast so that it was more tender. I also rubbed it with salt and pepper before browning to add a little flavor. I added a bit more cumin and garlic to the crock pot and left out cilantro b/c I just don't like it. And like I said, it was good. Very good. But with MORE garlic, salt (the recipes calls for none?) and cumin I think this could be fantastic.

Parmesan Asparagus

I trimmed and then threw into a ziplock as others suggested. Measurements were different as I had more than 10 stalks so I just used my best judgment. I added olive oil, 4 cloves minced fresh garlic, salt and pepper to the bag and let it marinade for a couple of hours. Poured it all onto a cookie sheet and cooked about as long as it says here, then sprinkled with shaved parmesan. Yum! Got rave reviews as well. Cooked for me to perfection - still a little crispy how I like it.

Quinoa and Black Beans

Sorry, guys. This just didn't work for me. And I so wanted it to! I love quinoa and black beans, plus with all of the rave reviews, I figured it was a slam dunk. Unfortunately, it wasn't... at all. I found it an extremely boring and bland dish. The only flavor that came through at all was the cumin and I used double the garlic. I definitely won't be making again.

Kona Chicken

It wasn't AWFUL... but the smell coming out of the crock pot sure was. The dish itself was just bland. I even added some garlic before cooking. Towards the end, I added a bit of brown sugar and extra soy sauce, but it was too late. Won't be making again.

Flourless Peanut Butter Cookies

Um. No. I followed other reviews - used organic peanut butter, less sugar (split white and brown), a dash of vanilla and cooked longer. These cookies weren't "a bit" crumbly. The completely fell apart! They were impossible to even pick up and eat. I even added some quinoa flakes (similar to oatmeal) to help keep them together. Didn't work. Won't be making again.

Crunchy Peanut Butter Balls

3 1/2 stars would be more accurate. These were good and easy. I just found them a tad sweet for my taste as did everyone else who ate them. If/when I make them again, I'm not going to dip them in chocolate. My daughter and niece (both sweet freaks) made me peel off the chocolate layer so they could just eat the inside. That was the best part. Also, I halved the shortening. It's really just awful for you and you don't need the full amount.

Pumpkin Black Bean Soup

Odd. I didn't love this soup, but it was strangely addictive and once I started eating it, I couldn't stop. I made a few changes. Only mashed up 1 can of black beans. Added cumin and cayenne to the onions while they sauteed. Used more like 20 oz pumpkin. Left out the ham. Used chicken broth instead (because I had it on hand). And at the last minute, I added a few dashes of nutmeg b/c it seemed a bit lacking. I also let it simmer about twice the amount of time called for. Oh and I used apple cider vinegar instead. At first, I was afraid it would be too vinegary. But that didn't wind up being the case at all. Brought it for lunch today and topped it with a dollop of Greek yogurt and a touch of shredded cheddar. I would make it again. Easy enough. And... yeah... something about it I really liked.

Healthy Garden Salad

Love this recipe! I like to make it early in the week so I have lunch for a few days. I use less cilantro and double the black beans. Any kind of vinegar will do. I've used organic apple cider vinegar and it's just as good.

Water Chestnut Wraparounds

These were awesome! Very easy to make and so tasty. I microwaved the bacon for 2 minutes to get rid of some of the grease and cut back on the baking time. I soaked the water chestnuts in low sodium soy sauce overnight and then sprinkled with brown sugar. After I assembled them, I drizzled some honey before baking. Yum! Would make these again in a heartbeat!

King Crab Appetizers

This were meh. They went, but nobody went to crazy for them. Had a couple myself. I used the phyllo cups, added Old Bay, squeezed lemon on them after they baked and doubled the crab. I wouldn't make again. There are far better recipes out there.

Easy Chicken Satay

This was very good. But I think it could have been better. It didn't wind up thick enough, so I added more peanut butter... which worked out well b/c it wasn't peanut butter-y enough for me initially. Next time, I'll cut back on the chicken stock for sure. I also may add some scallions. I think that would be a nice touch. And red pepper flakes or cayenne pepper at the end to give it a little punch. I don't even like spicy foods, but this could have used just a bit of a kick. But it was easy enough and tasty. I'd give it another try for sure. Everyone else seemed to like it as well.
