Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

It was good , i used a strong cheddar, and sauted onion and garlic then added it to the spinach .I used fresh spincch which I wilted with boiling water. i seasoned the chicken with a chicken spice before sauteing.The meat was tasty and moist., which is always a worry with chicken breasts. Covering with foil helps keeping it juicy and moist, - Madeleine

Simmered Cranberry Pork Chops

I used sweetened Craisins and added no sugar. Also, I added 3/4 cup chicken bouillon extra. I let it simmer till it was fork tender, and thickened the sauce with a little tapioca flour mixed with a little water. Dead easy and delicious. A KEEPER.orange juice and ginger could be a nice addition well worth a try next time.
