Spicy Mango Salad

This is quite good, but unless you have a palette for VERY spicy foods, I would cut the pepper flakes WAY back! Also, if you are trying to save on calories, you can omit the oil or reduce it significantly, in my opinion.

Kale and Feta Salad

this was a great springboard to experimenting with more kale. I didn't have the ingredients listed so I improvised with balsamic vinegar and pumpkin seeds. I will certainly be making this salad and other variations of it again and again!

Cider Vinegar Chicken

This was just ok for me. The chicken had a sour taste to it which made my son pause for a moment, but fortunately it wasn't too strong that he kept going. I put chopped onions on the top which were delish! The chicken was very moist and tender which was nice. I probably won't make this again but if I did, I might consider using a different type of vinegar and reducing the quantity.

Cranberry Orange Loaf

The flavour of this bread is very good and not too sweet. The batter however was very stiff and the resultant bread was on the dry side. I think in the future I would add a bit of sour cream or oil or more eggs to moisten it up a bit.

Mary's Meatloaf

This is a great recipe, quick and easy. 4 stars only because of the "white" bread suggested by the author. Use bread that has as much whole grains, flax, sunflower seeds, etc., to help your family get good quality carbs and fiber in their diets! Also, if you are in a hurry, this mixture can be spread out in a casserole dish or even in muffin pans to decrease baking time! :)

Emily's Famous Chocolate Shortbread Cookies

As suggested by others, I increased the cocoa and decreased the flour accordingly. This was a tasty recipe with an easy to work with dough. It is too fragile to work with detailed or large (over 2") cutters though. :(

Oatmeal Lace Cookies

PLEASE READ: This is a nice tasting recipe, but I am quite certain that the 1/4 teaspoon measure for putting the batter on the cookie sheet is a typo. The batter will spread 2-3 times the size while baking, with that in mind, I would suggest a 1 teaspoon measure for a decent size cookie in the end. Also, I had best results using parchment paper and then removing the paper with the cookies from the pan once cooked, cool completely before removing cookie from paper. Happy baking!

Sugar Cookie Icing

Great recipe, but I just wanted to note that if you plan on using this as a white icing, you will have to add a little more milk, I recommend 1 tsp. Makes a very nice clean white icing.

Royal Icing I

I think the mixed results for this recipe are due largely to to undefined size of egg. There is a big difference between small and jumbo size eggs and all the sizes in between. This recipe probably works very well with small eggs, but if you are using larger eggs you should take the increased volume of egg into consideration and either reduce the egg count to 2-3 or plan on increasing the sugar content.

Roasted Beets with Feta

After being recommended beets to increase my iron intake I decided to try this recipe. If I knew beets were this good I would have started cooking them years ago! Terrific combination of subtle sweetness from the beets and salty from the feta with that wonderful balsamic acidity. I didn't have any shallots so I sauteed some onions in the olive oil before adding the vinegars. Even my 4 year old gobbled it up. Will be making this one over and over and over.....

Fasoliyyeh Bi Z-Zayt (Syrian Green Beans with Olive Oil)

I thought the beans and cilantro was an unusual combination, but having them both in abundance right now I thought I would give this a try. It was awsome!! Works great with fresh beans; cook until bright green. I also doubled the garlic because we love the stuff. Will deffinately be making this again and again and again. Thanks to Tasneem for posting this one!

Butternut Squash Bisque

This soup is a real keeper. Great for a winter meal. I roasted the squash in the oven for about 1 hour at 350, omited the oil, added lots of garlic, used chicken stock (it's what I had on hand) and substituted the cream with condensed skim milk. Served with sour cream. Suprisingly satisfing and a beautiful shade or orange!

Pasta Fagioli Soup II

This was very satisfying and a perfect end to a cold winter day. A few modifications I made: Sauteed some onion and the garlic in some olive oil before adding the rest of the ingredients. Also added a couple celery stalks and a couple carrots. I used a bag of fresh spinach rather than the canned, since that is what I had on hand. Also used whole wheat pasta. Yummy, simple and fast prep work. Tastes even better the next day. I will deffinately be making this again! :o)

Cream Cheese Frosting II

A terrific recipe which I have had many compliments on. I usually make it with a light cream cheese and about 1/2-3/4 of the sugar that the recipe calls for. If you are looking to simply cover a 9x13 cake, a half portion of the recipe is sufficient. I have made this several times with great results

Brazilian Black Bean Stew

This was quite tasty. My hubby and I do not eat pork, so I substituted a raw chicken chorizo sausage which I browned before I did anything else. I also used the large 28oz can of tomatos rather than the 14oz. The cilantro is a must for this recipe in my opinion, as it really ties the flavors together. I imagine that the left overs will be even better than the first night.
