Pumpkin Bread II

I just served this and it was great. Like everyone else, I make modifications. In this case I added a ribbon of cream cheese. Mix one egg, 6 oz cream cheese and 1/3 cup sugar together. Pour 1/3 cup batter in each pan. Spread cream cheese mixture over batter and then add remaining batter, covering the filling. It was very good.

Spinach Stuffed Chicken Breasts

This is a very good recipe and so easy. I pounded the chicken breasts, wrapped the stuffed breasts in two strips of bacon and sprinkled them with a bit of lemon pepper before baking. At someone's suggestion, half way through the cooking, I drizzled the rolls with a mixture of olive oil,lemon zest and lemon juice. Serve it for company with an orzo/rice pilaf and a salad or other vegetable. It will impress.

Caramel Bars

These are really good the first day and only improve with age. I have just started using heath bits instead of nuts and they taste like little candy bars. I find them easier to get out of the pan if you grease it first and don't pour the caramel to the edge.

Chicken Katsu

This chicken is very easy and superb. Make sure the oil is good and hot before adding the chicken and only do a few pieces at at time so the oil doesn't cool down. By the time the outside is golden brown the chicken is done. We will definately be making this again.

Unbelievable Chicken

Got an email from allrecipes this morning and decided to make it today. I pounded the chicken breasts as thin as possible. Didn't have a lime so I used extra lemon juice. It's a keeper. Nice subtle taste of mustard with a sweet tangy base. A great summer marinade that can be prepared from things on hand.

Farmer's Market Vegetarian Quesadillas

Excellent healthy choice for dinner. It's a versatile recipe that can work with whatever fresh vegetables you have on hand. I covered the "empty" half as suggested with cheese and after that melted I flipped it over on the full half. Also added chicken for the by the bigger eaters in our house. It's a keeper.

Cumin Turkey Burgers

Absolutely the best use of ground turkey I've come across - sure beats chili and meatloaf. Make sure that the mix is cold before you grill the burgers. Delivered one to our friends who immediately asked for the recipe and made them several days later.

Roast Pork with Maple and Mustard Glaze

VG pork dish. Pondered whether to put it in the crock pot but opted to follow the recipe and cook it in the oven. Only changes (as recommended by others): seared it first in a pan with vegetable oil, added a few splashed of tabasco to sauce, and thickened the sauce after it was done. Quite tasty.

Baked Potato Soup III

This is a great winter soup. I followed the advice of others and microwaved the potatoes for 5 minutes each side then baked for about 20 minutes @ 350. I also sauteed the onions in the bacon fat/butter to soften them before adding the flour and milk. I use the immersion blender after adding afew potatoes then add the balance so it's both creamy and chunky. Add more salt and a splash of tabasco.

Mid-Eastern Chicken Thighs

Really good, easy weeknight dish. I used bone in but skinless thighs. As other reviewers posted, it could benefit from some salt when served. I served it with some Israeli couscous, naan and green beans. Will definitely make this again.

Smoked Salmon Vodka Cream Sauce

As suggested, double the sauce. I added garlic and more onions and sauted them until soft before adding the vodka. The cayenne pepper is essential. It adds the warmth the sauce needs. Be careful adding any salt because the salmon will likely impart enough salty flavor. I will make this again.

Summer Corn Salad

Honestly, I don't post reviews as much as I use them so consider this an exception. A friend gave me some fresh picked corn today & I really wanted to showcase it. Well this is the salad. Had everything on hand and followed the recipe (another exception) using a tad less sweet onion. Wonderful salad. Wish I had made it earlier this Summer. It's a keeper.
