Pork Chops with Stuffing

Yikes!!! This was so so good!!! I know that I will make this again and again. I did saute up some onions, celery and garlic and then added it to Stove Top stuffing. I wanted to make a little extra so I knew that I would have left overs. I used 8 pork chops and two cans of the soup and all other ingredients the same. I did not realize how much of a gravy it would make so for the second night I made a batch of mashed potatoes. This was so good!!!

California Italian Wedding Soup

Totally enjoyed this. I did not have seasoned breadcrumbs so I had to add my own seasonings to it. I think I could have added more maybe garlic. The lemon is a nice touch. I used the spinach option. It was very good and quick and easy to make.

Made as is...not so good. Replace the milk with OJ and you could be at Jamba Juice. I also throw in some raspberries and even some frozen pineapple. Yum

Lemon Coconut Squares

These were pretty good. I did cut the sugar and upped the lemon as most reviewers suggested, I was just disappointed that the coconut did not stand out as much as I had hoped. I might try these again and up the lemon a little more and for sure the coconut.

Spaghetti Pie III

This was very good. Family ate it up! I used whole wheat pasta and I mixed two of the Barillo sauces...roasted garlic and also black olive sauce. I used all of the cream cheese and also mixed it with the sour cream and the pasta and a handful or so of parm cheese. I put some suace on the bottom of the pan and then layered the pasta and then some sauce, then the rest of the pasta and finally the rest of the sauce. I covered it with italian four cheese blend. It was good...I think I was expecting the cream cheese mixture to stand out more...it was good.

New Potatoes with Caper Sauce

Wow. I am not sure I expected it to be as good as it was. I was hopeful with all the great ratings...and now I am one of them. I made this for a big group and I did not adjust the serving size for the recipe when I printed it out...so I had to do it on my own with the copy that I had with me since I was not able to access the computer. It was fantastic. I will make this again and again. It also was excellent the next day (we had a little left over) at room temp. It reminded me of a potato salad. But with our grilled steak this was fantastic warm. This is a nice change from your average potato dish. As far as the amount of butter....go for it. Unless you eat like that every day, a little every once in a while is a delicious treat!!!

Raspberry Cream Cheese Bars

This was a hit. I just spent a week at a beach house with about 14 people. I made this as one of the desserts that was easy to eat any time of day. It was great for breakfast too. I did use two packs of 8 ounce cream cheese. I warmed the preserves just a little and I kind of swirled it throughout the cream cheese. It looked great and tasted great. This dessert was the first one gone!

Spicy Chipotle Turkey Burgers

I am giving this a 4 only cause I changed some...but the idea is a 5 star for sure! I used one pepper and chopped it up for 2 burgers. I used a lightly toasted english muffin. I grilled red onions while I cooked the burgers (in a grill pan). I had some reduced fat cheddar cheese and this was spicy and yummy.

Mexican Style Shredded Pork

This was very good. I prepared it all the night before, then turned it on in the morning before work. I added a chopped onion and about 5 garlic cloves. I also only put about 3/4 cup of chicken broth, it was plenty. As it cooked there was more liquid. At the end I did end up putting in a knorrs tomato chicken bullion. Next time I may up the chipotle just a bit. Served it with rice and some pinto beans and some tortillas. THis will be something I make again for sure.

Italian Breaded Pork Chops

These were fantastic and easy. I used four pork chops and I pounded them out a bit..not real thin. I dredged in some seasoned flour and then egg and milk mixture and then finally into the bread crumbs. I mixed bread crumbs and panko crumbs only cause I was trying to finish those off. The bread crumb mixture was about 3/4 c and then I used a heaping 1/2 cup of parm cheese.I sprayed a skillet with olive oil spray and put maybe a 1/2 T of butter. I used 4 cubes of the frozen garlic from Trader Joe's and once that heated I put the chops in the pan...about 4 - 5 minutes on each side. I then sprayed a glass baking dish with a little more olive oil and baked uncovered for 25 minutes. These were perfection!

Fiesta Cheese Rice

This was great. Used a bullion cube and used regular white rice, not instant. The addition of sour cream is what got me...I love what sour cream does to food. This went perfect with beef enchiladas. I also used Sargento's reduced fat mexican 4 cheese blend. Yum.

Baked Brie with Caramelized Pears, Shallots and Thyme

This was OK. It did not knock my socks off. Not sure why...it had all the ingredients to be a wonderful appetizer. I have to say that eating the bread that the cheese is baked in is far better than any crackers. THe sourdough bread toasted and was crunchy and good. Maybe I should have used a larger round so I would have had more toasted bread to enjoy it with! Oh and baking 45 minutes is way tooo long. I did 20 and that was plenty. Otherwise it is very runny, Had to let it set a bit before we ate it. I will still search for more exciting appetizers in the future.

Baked Ziti I

This was really, really good. I am giving it 4 stars just because I did change it up a bit. I used rigatoni. I also used Turkey Bolognese that is an excellent recipe from Rachael Ray's daytime TV show, I think honestley, that was the key as to why it was so tasty I love that sauce!!!I make a big batch and freeze some. I used low fat everything. I mixed about a cup of light sour cream with a heaping 1/2 cup of ricotta. I had some prepared pesto from another recipe and I hate for anything to go to waste so I mixed that with the sour cream and ricotta along with a handful or grated parmesan. I also mixed the sauce with the noodles verses pouring it over as a layer. On top I added reduced fat Sargento 4 italian cheese and also added grated parmesan. This makes a lot but a great meal to carry over for a couple of days. This was really good.

Spinach Lentil Soup

I have to give this one 3 stars. I did alter the recipe but only after I felt it was lacking taste. I added some crushed tomatoes and some salt. It just seemed to need more salt. It does taste better on day two but I probably won't make this one again. I still think that the Lentil Chili is the best. I guess I will just stick to that one!

Puerto Rican Tostones (Fried Plantains)

My husband is Puerto Rican and he introduced me to these when we went to San Juan. I loved them and had to make them. I use a press that we bought in Puerto Rico, but it is just as easy to use a bottom of a glass. I also salt the water that I soak them in.

Easy OREO Truffles

These were pretty good. I was expecting them to taste more like oreos and cream cheese but it really did not have that flavor exactly but a nice chocolatey flavor. I attempted to do white chocolate but melted it wrong...i then mixed some milk chocolate and some white chocolate and drizzled with semi sweet. I used a small melon baller to make the balls and then put them in the fridge. The dipping in melted chocolate was a chore and it probably did not help that I was rushing it. I used skewers, that was probably the easiest. May try again with peanut butter too.

Hot Dip

This was wonderful. I used 5 strips of bacon and used alot more mushrooms. I used more like 20 oz pack from Costco. It is not the prettiest looking, but it was great on bread. I think with only 8 oz of mushrooms, the cream cheese and sour cream overpowered. Use more mushrooms.
