Skillet Ham, Cabbage and Potatoes

I used turkey ham instead of regular ham, and cole slaw mix instead of chopping cabbage myself. Also, I used red potatoes because I like those better than regular potatoes. It turned out great - I have added it to my "tried and true" recipe collection :)

Pumpkin Crumb Cake

I made dinner for about a dozen people and served this for dessert, and it was a huge hit! My roommate borrowed the recipe and made it again just a week later. I accidentally omitted the 1/4 cup of brown sugar and it turned out fine - it was sweet enough that I don't think I will put it in next time I make the dessert.

Broccoli Chicken Casserole III

Very good - I liked it better the second day. I used fat free sour cream and it actually tasted fine. I also used about 1/2 cup of freshly grated Parmesan and 1 bag of frozen broccoli (unthawed). I sprinkled the casserole with extra Parmesan cheese before I baked it - delicious! This makes a good sized casserole - I fed seven people and had about a quarter of the casserole left over.

Baked Spaghetti Squash with Beef and Veggies

This was so good! As a busy college student, dinner is usually whatever's in the cupboard, but when there's a lull in my schedule I like to take the time to try out new recipes. It's a compliment to this recipe that my very opinionated roommate declared it the best dish I've made this year. And I didn't get sick of it even after eating leftovers for three days straight :) This one's a keeper.

Mostaccioli with Spinach and Feta

I made this for an Italian-themed dinner with several friends and it was a hit. I doubled the recipe, but used the same amount of spinach and olive oil, and I used bow-tie pasta because that's what I had on hand. I will definitely make this again.

Spaghetti Squash I

Not too bad, but I will make some modifications next time I try this. For one, the squash was a little too "crunchy" for my taste - I would probably cook it longer. Also, I added extra feta and olives and still felt that the flavor was a little bland - maybe my squash was just larger than normal!

Easy Red Beans and Rice

This is a keeper! I added lots of extra garlic, used a can of diced tomatoes, and served it over brown rice. Very good and very easy.

Golden Sweet Cornbread

I use a scant 1/2 cup of sugar instead of 2/3 cup, and bake it in an 8" square pan. With those modifications, this is my new favorite cornbread recipe. I have made it several times this school year and my roommates absolutely love it!

Crissi's Sweet Potato Biscuits

I originally followed the recipe as given, but the dough that resulted was gooey and impossible to roll. In the end, I used 2 1/2 cups of flour instead of 1. The biscuits were not spectacular, but they were good. I like the flavor, which is different from a traditional biscuit, and I plan to keep this recipe and make it again.

Sandy's Chocolate Cake

So delicious! I usually don't care much for chocolate cakes or chocolate frosting, but my roommate requested a chocolate cake for her birthday and I thought I'd give this recipe a try. It was a huge hit! Everyone loved the cake, and someone even told me it was as good as the chocolate cake at a local specialty bakery (which was really saying something). Definitely a keeper. The one change I did make was to add about a cup more powdered sugar than was called for - the frosting was not stiff enough before that.

Best Brownies

These brownies are very rich, and very good. I have made them for friends on several occasions, and they have gotten rave reviews each time. I always need to add milk to the frosting to make it spreadable, but other than that I make the recipe exactly as it is written.

Peanut Butter Cookies IX

These were exactly what I was looking for! I used natural peanut butter, and with the oats and whole wheat flour, they had a great texture and a delicious nutty flavor. I have one or two great cookie recipes that I make all the time, and it's rare that I find a new recipe that I like well enough to add to my repertoire, but I think I may have found one here.

Connie's Zucchini "Crab" Cakes

I thought these fell apart a little too easily, and were a little too soft on the inside and messy to make - I think next time I will let the zucchini stand and squeeze out the water before I make the zucchini cakes. But even so, they were a HUGE hit when I brought them to a dinner with friends. One of those friends requested the recipe, has made them several times since, and named them on his blog as one of his top five recipes of the year :)

Radish Top Soup

Yum! I'm a little hesitant about the 5-star just because I used sour cream instead of whipping cream (that's what I had on hand), and I think that made a difference. But it had a great flavor and a pretty green color, and I loved it. I will definitely make it again the next time I have radish greens to use up, and I think it would still be good using whipping cream, or even substituting milk.

Janet's Rich Banana Bread

This is my new favorite banana bread recipe - very moist and flavorful. My roommate agrees :) Like most reviewers, I used 1 cup mashed bananas, but otherwise I followed the recipe exactly as given. I keep it in the refrigerator and eat it toasted with a little bit of butter for breakfast.

Tomato, Corn and Avocado Salsa

This was so good! I have no hesitation in giving it five stars, and it's very easy to make. I made it as a side for a family taco dinner and it stole the show. I made it exactly as written and served it with blue corn chips, but my brother and I agreed that it would be just as good (if not better) served simply as a salad since it's chunky and a little hard to scoop. I was also surprised at how well the leftovers held up on the second, and even third day. I think the lime juice must keep the avocado from browning.

Pork Chalupas

This got rave reviews from my family when I made it for Sunday dinner. I have never cooked dry beans before and was worried that they wouldn't cook all the way through, so I boiled them beforehand and let them soak for an hour before putting everything in the crock pot. I don't know if boiling made a difference or not, but they were cooked perfectly. Great flavors. It does make lots!

Mediterranean Quinoa Salad

Once the quinoa was cooked, the dressing looked like way too much. So I only used about half of the dressing (lemon juice, olive oil, vinegar), and none of the salt since the chicken bouillon seemed to add enough salt flavor. I also used chickpeas instead of chicken to make it vegetarian. With those changes, I quite liked it. My husband didn't care for it much so it might not be for everyone, but I would make it again for myself.
