World's Best Lasagna

Reviewed: Apr. 18, 2013
This is basically the same recipe I got from my 80 yr old Italian neighbour 45years ago lol. I add little tiny meatballs, salami, and sliced hard boiled egg to each layer as well. I buy all my ingredients at an Italian store and use fresh basil and oregano. I also do not pre-cook the noodles and assemble the night before. The owner of a popular Italian restaurant in town challenged me to beat his lasagna - I did!!!! He was blown away by how good this was and his Italian grandma told him that mine was proper old country lasagna from Northern Italy.

Garden Tomato Salsa

I don't use oil or vinegar; just juice of one lime or more to taste.

Baked Salmon II

Reviewed: Aug. 31, 2012
No need to marinate. Place salmon fillets on parchment paper on baking sheet. Brush with olive oil, sprinkle with purchased salmon seasoning, or lemon juice, dill and paprika. Bake in 400F oven for approximately 10 mins. Do not overcook -it gets dry and strong tasting.

Quick and Easy Chicken Noodle Soup

Reviewed: Jul. 23, 2012
I add brown basmati rice instead of noodles and double up on the celery and carrots as we like a thick soup. One day I aadded a 1/2 container of deli tomato basil soup that I needed to use up. Amazing! Family thought they'd died and gone to heaven.

Lightning Gravy

Reviewed: Jun. 21, 2012
Add a pat of butter to "finish" it, and a shot of Kitchen Bouquet to deepen the color, especially if you are making beef gravy. The richness of the color is aesthically more pleasing. I've been making gravy like this for over 40 yrs. a little bit of oregano, sage or poultry seasoning greatly improves the flavor.

Emily's Famous Hash Browns

Reviewed: May 9, 2012
Excellent! Really is a potato pancake recipe done as hash browns. I seasoned them with finely diced chives, a little garlic and herbs, as the spirit moves me. I always mis butter with the oil because I like the flavor and the browing from butter. I have also added finely diced cooked bacon to the mixture.

Super Al's Cocktail Sauce

Reviewed: May 9, 2012
I use Heinz Chili Sauce instead of ketchup. Less sugar and more flavor! A great recipe -I CANNOT tolerate the bought stuff!
