Breakfast Pies

I used canned croissants rather than biscuits - basically lined the bottom of the cup with it and built up the sides by smooshing the dough to form the insides of the muffin cups. Also I used bacon I made traditionally and pulled apart one per muffin cup. To make the eggs easier I scrambled them up rather than having them set in the oven. 1- Croissant base 2- Pinch of shredded cheddar 3- Scrambled eggs 4- Jam bacon pieces into egg with your (clean) fingers, because it's fun. (Dash o' salt n' pepper) 5- More shredded cheddar, because you can never have too much cheese. Voila! I felt it was easier, and they tasted like drive through breakfast croissant sandwiches!

Cinnamon-Roasted Almonds

My home smells divine from these little treats! So simple to make, I took the advice of others and used vanilla instead of water - I also doubled the recipe (eyeball, I'm not fancy ;) )with two egg whites. I added a dash of nutmeg and forgot about the tip to add brown sugar until I had already poured the almond mixture on the pan so I sprinkled some on top and due to the regular stirring it incorporated quite seamlessly. These are AMAZING. Definitely making these for Christmas!

Double Layer Pumpkin Cheesecake

I didn't have a spring form pan so I improvised and used cupcake tins, they're not the typical size - slightly smaller but not as small as a mini muffin tin would be. Anywho, I also didn't have a crust, so I used store brand cinnamon graham crackers (that I pulverized with a crude little 'underside of a small flat bowl' trick :D ) mixed with butter - lined the bottom of the cups with that and proceeded with the recipe. They came out AMAZING. I brought a tray to work with a can of whipped cream and a bottle of chocolate syrup - they were all gone by lunch time! I will ABSOLUTELY be using this recipe again. It was simple, creative and looked like it took far more effort and much longer than it did in reality. Work smarter, not harder! My kinda recipe!
