Olive Oil Roasted Eggplant with Lemon

Followed some of the suggestions: salted for 30 minutes, and added basil. Was delicious. Will make again and again. Very healthy and tasty, and appreciated by the husband.

Chicken Cordon Bleu II

Greatly appreciated by my husband and myself. I served it with a little less of the sauce as it is very fat-rich, and it is still enough to accompany this very tasty chicken! I kept the rest for next time (in the freezer). I will serve this next time we have a dinner party or family over. Wonderful!

Roasted Vegetables

Wonderful. I agree with some of the reviewers, toss in the onions, peppers a little later to keep their colour. I chose different vegetables, including celery, carrots, sweat peas and Jerusalem artichokes (so yummy!). Will redo this on a very regular basis--great to get the whole family to have a large portion of vegetables.

Onion Rice

I tried it with brown rice/wild rice mix and it was pretty good although I had to cook for 60 minutes and put an extra 1/4 cup of water/chicken. Will make again, but probably add tiny dice of carrots, and peas to give it more textures.

Salmon with Brown Sugar Glaze

tried it on rainbow trout and was ok, but will probably not make again. I am not a fan of how sweat it tastes for a meal.

Apricot-Pecan Sweet Potatoes

My husband loved it, he said it tastes like deserty pumpkin dishes. I liked it less, expecting a little more crisp to it. I used only half the brown sugar and it was sweat enough.
